Turmeric cake

Banh nghe is a rustic specialty in Tien Hai, Hung Yen (former Thai Binh province), and was listed in the Top 100 Vietnamese specialties 2021-2022 announced by the Vietnam Record Organization (Vietkings) and Top Vietnam Organization (VietTop).

According to locals, the cake is made from simple, easy-to-find ingredients. The crust is made from rice flour and turmeric, while the filling is made from pork fat, onions, pepper, etc.

Because it is made from fresh turmeric, turmeric cake is also considered an anti-inflammatory, detoxifying, digestive stimulant and immune-boosting medicine.

It is believed that this cake also helps beautify the skin and is good for women after giving birth. Therefore, when visiting a “postpartum woman”, Hung Yen people often buy an extra bag of turmeric cake as a gift.

Eel noodle soup

Eel vermicelli soup is a specialty of Hung Yen, most famous in Pho Hien area (spread over Lam Son and Hong Chau wards, old Hung Yen city).

This noodle dish was recognized as one of the 100 Vietnamese specialties (2020-2021).

Not only does it have an eye-catching appearance, eel vermicelli soup also attracts diners with its unique flavor, a combination of many different ingredients.

Hung Yen eel vermicelli soup is different from Hanoi vermicelli soup. The most distinguishable points are the accompanying ingredients and broth.

A bowl of eel vermicelli soup will include vermicelli, eel meat, pork roll, fried egg, fried pork belly, etc., served with broth made from crab, sea worms and dried shrimp, seasoned with a little shrimp paste for a distinctive aroma.

Fish cake

Fish cake is a specialty originating from Nguyen village, Dong Hung commune, Hung Yen province (Nguyen Xa commune, Dong Hung district, old Thai Binh province).

This cake was once in the Top 100 Vietnamese specialties 2020-2021, becoming more and more widely known, appearing commonly in many localities in the province.

According to the locals, banh cay is made from rustic ingredients such as yellow sticky rice, gac fruit, gardenia fruit or leaves, lard, peanuts, sesame, ginger, coconut...

All will be mixed with malt syrup (or molasses) until smooth, then poured into molds, wait for it to dry, then cut into small pieces and packaged.

Not only a snack, enjoyed with green tea by the elderly or a rustic gift for children, fish cake also appears on the tray of offerings during Tet holidays, death anniversaries and local weddings.

Many families and people living far from home also order fish cakes to be shipped hundreds of kilometers from Hung Yen as gifts for friends and acquaintances or to offer on the altar to show their respect.

Western tourists try the sweet and fragrant specialties in Thanh Hoa, visit the countryside market to see the "strange" but delicious dishes . Not only were they excited to be introduced to some strange dishes in the countryside market in Thanh Hoa, Western tourists also enjoyed the sweet and fragrant specialty of Co Lung duck, eaten with betel leaves and dipped in salt, pepper and lemon.
