Vai village rice noodles have long been a typical traditional product of Tri Quan commune (old), now Dan Chu commune. With delicious flavor, white and soft noodles, imbued with the identity of the homeland, the product not only maintains its position in the provincial market but is gradually asserting its position in markets outside the province and aiming for export.

Mr. Nguyen Minh Phuong's family in Zone 7 produces about 200 kg of rice every day, earning nearly 190 kg of dry noodles to sell on the market, thereby increasing their income.

The rice noodle making profession in Vai village has a history of several decades, closely associated with the lives of many generations of people here. Over time, the profession has been preserved, developed and innovated thanks to the dynamism and creativity of households and the support of local authorities. Previously, rice noodles were produced manually on a small scale, mainly serving the needs of local people. Rice was ground with a stone mortar, noodles were made in a pot, cooked on a wood stove, and noodles were dried and sliced with a knife. Over time, noodle-making households, realizing the economic value and development potential of the product, have boldly invested in modern machinery, expanded production, ensured food hygiene and safety and increased labor productivity.

A typical example is the rice noodle production facility of Mr. Nguyen Minh Phuong's family - one of the long-standing rice noodle producers. Mr. Phuong said: “Previously, the village only had a few households producing noodles, vermicelli and cakes. In recent years, due to increased market demand, households have expanded production, invested in more machinery to increase productivity, increase competitiveness in quality and product price. The use of machinery in production has shortened the process, increased output and saved labor. Every day, my family produces about 2 quintals of rice, yielding about 190 kg of dry noodles. To have chewy, delicious noodles that do not break when cooked, I choose Khang Dan rice for processing. After being rolled into strands, the noodles are dried and packaged, ensuring that the noodles are crispy and delicious, and do not get moldy when stored for a long time. The noodles are sold out as soon as they are produced, helping to increase the family's income.”

In order to enhance the value of the product, Dan Chu commune has supported production households participating in the province's OCOP program, providing guidance on packaging techniques, origin traceability stamps and improving packaging designs. In 2023, Vai village rice noodles were recognized as meeting 3-star OCOP standards, opening up great opportunities to reach further in the market. Currently, the product is produced centrally in Zone 7 with nearly 10 participating households, and is present in many stores and mini supermarkets in and outside the province, receiving positive feedback from consumers. In 2024, households will supply nearly 5,000 kg of rice noodles to the market, contributing to increasing income.

Not only is it an essential consumer product, Vai village rice noodles also contain cultural values, contributing to promoting the image of the homeland. During festivals and trade fairs, the product is always chosen to introduce to tourists and partners.

Currently, Vai village rice noodles are being produced in a concentrated area in Zone 7, Dan Chu commune. The products are being actively promoted and distributed in the province and some neighboring provinces. In 2024, households making noodles will supply the market with nearly 5,000 kg of rice noodles. Comrade Nguyen Huu Nhat - Secretary of the Party Committee of Dan Chu commune said: For a locality with many difficulties like Dan Chu, the successful development of OCOP products is a great effort of the local government. Input materials are carefully selected, the production process ensures food safety and the environment. Products are sold as soon as they are made, thereby generating income and improving the lives of people working in the profession. The local government will continue to direct the expansion of consumption channels on e-commerce platforms so that people everywhere know about the agricultural products of Dan Chu countryside, thereby promoting the local socio-economic development.

Bringing Vai village rice noodles to the world is not only an economic goal but also a passion for preserving the traditional craft of the local people. With the continuous efforts of the producers and the support of the local government, this specialty product promises to reach new heights, affirm its position in the market, increase income and create sustainable jobs for local people.
