Vai village rice noodles have long been a distinctive traditional product of the former Tri Quan commune, now Dan Chu commune. With its delicious aroma, chewy white noodles, and rich local flavor, the product not only maintains its position in the provincial market but is also gradually establishing itself in markets outside the province and aiming for export.

Mr. Nguyen Minh Phuong's family in Zone 7 produces about 200 kg of rice per day, yielding nearly 190 kg of dried noodles which they sell to the market, thereby increasing their income.

The rice noodle making craft in Vai village has a history spanning several decades, closely intertwined with the lives of many generations of local people. Over time, the craft has been preserved, developed, and modernized thanks to the dynamism and creativity of the households and the support of the local government. Previously, rice noodles were produced manually on a small scale, mainly serving the needs of the local population. Rice was milled using stone mortars, noodles were made in pots over wood-fired stoves, and after drying, the noodles were sliced ​​with knives. Over time, noodle-making households have recognized the economic value and development potential of the product, boldly investing in modern machinery, expanding production, ensuring food safety and hygiene, and increasing labor productivity.

A prime example is the rice noodle production facility of Mr. Nguyen Minh Phuong's family – one of the long-standing rice noodle producers. Mr. Phuong said: “Previously, the village only had a few households producing noodles and vermicelli. In recent years, due to increased market demand, households have expanded production, investing in more machinery to increase productivity and improve competitiveness in terms of product quality and price. The use of machinery in production has shortened the process, increased output, and saved on labor costs. Every day, my family produces about 200 kg of rice, yielding about 190 kg of dried noodles. To have chewy, delicious noodles that don't break apart when cooked, I choose Khang Dan rice for processing. After being rolled into strands, the noodles are dried, packaged, ensuring they remain crispy and delicious, and don't get moldy even after long storage. The noodles sell out as soon as they are produced, which has helped increase my family's income.”

To enhance the value of its products, Dan Chu commune has supported participating households in the province's OCOP program, providing guidance on packaging techniques, traceability labels, and improved packaging designs. In 2023, Vai village's rice noodles were recognized as achieving OCOP 3-star standard, opening up significant opportunities for further market expansion. Currently, the product is produced primarily in Zone 7 with nearly 10 participating households and is available in many stores and mini-supermarkets inside and outside the province, receiving positive feedback from consumers. In 2024, these households supplied nearly 5,000 kg of rice noodles to the market, contributing to increased income.

More than just an essential consumer product, Vai village rice noodles also hold cultural value, contributing to promoting the image of the homeland. During festivals and trade fairs, the product is always chosen to be showcased to tourists and partners.

Currently, Vai Village rice noodles are being produced primarily in Zone 7, Dan Chu Commune. The product is being actively promoted and distributed within the province and several neighboring provinces. In 2024, households producing noodles supplied nearly 5,000 kg of rice noodles to the market. Comrade Nguyen Huu Nhat, Secretary of the Party Committee of Dan Chu Commune, stated: "For a locality facing many difficulties like Dan Chu, the successful development of the OCOP product is a great effort by the local government. Input materials are carefully selected, and the production process ensures food safety and environmental protection. All products are sold as soon as they are produced, thereby generating income and improving the lives of the people involved in the trade. The local government will continue to direct the expansion of distribution channels on e-commerce platforms so that people everywhere can learn about the agricultural products of Dan Chu, thereby promoting the socio-economic development of the locality."

Taking Vai Village rice noodles to a wider market is not only an economic goal but also reflects the dedication of the local people to preserving their traditional craft. With the continuous efforts of the producers and the support of the local government, this specialty product promises to reach new heights, establish a strong position in the market, increase income, and create sustainable jobs for the local people.
