Every corner of the yard, every stretch of road in the villages and residential areas is used as a place to process onions and garlic. When the onion bunches are dry enough, people cut the roots, remove the outer skin, tie them into tight, clean bundles and place them carefully on the trellis. The onions are bundled in the traditional way, weighing from 4 to 8 kg. Each bunch of bulbs is firm, beautiful golden yellow.
90% of the quantity of onions and garlic is dried by the people in the sun or dried, preserved and sold gradually during the year, because the harvest time of onions and garlic is easy for traders to force down the price, sell cheaply, and the profit is not high. On the other hand, onions and garlic grown here are often full-term (115-120 days) so the bulbs are firm and can be stored for 6-8 months in the natural environment.
Processing onions and garlic creates jobs for people during the off-season. Ms. Nguyen Thi Dan in Pham Thai Ward said that at this time, dried onions and garlic that have not been picked clean are priced at 22,000 VND/kg. After being processed (cutting the roots, removing old skins, and tying them tightly), they are sold for 32,000 VND/kg. On average, people earn 150 - 200,000 VND per day from picking onions and garlic.
Mr. Nguyen Van Hiep in Thuong Quan commune said: "Taking advantage of the break time between shifts, I can help my family pick onions. The work is light, simple, and creates extra income. The racks of dried onions and garlic, after the preliminary processing stage, are like wearing a fresh coat."
Although the preparation of onions and garlic is simple, it takes a lot of time because all the steps are done by hand. Each onion and garlic bulb that passes through the hands of the people will be cleaner, shinier, and fresher. Tying onions and garlic into bunches also requires experience, meticulousness, and practice.
Mr. Nguyen Xuan Ha, Head of the Economic Department of Kinh Mon town, said: "Processing onions and garlic has created regular jobs for people during the off-season, suitable for many ages. The town applies a model of preserving onions and garlic from straw and dried banana leaves, helping the bulbs to be protected from pests and diseases and to be preserved for a long time."
The town's dried onion products usually have double bulbs, bright yellow color, and will turn darker over time. Garlic bulbs are white, large, and firm. Preserving dried onions and garlic in a natural environment helps onions and garlic bulbs increase their spicy flavor, making them more delicious when preparing dishes.
