Banh Da is a traditional dish of the highlanders, often appearing on holidays and Tet. Mr. Ly Hoi Seo, a resident of Dong Van ( Ha Giang province) shared about the previous stages of making the cake: “To get Banh Da, after harvesting the ripe rice, people selected the best rice grains, then mixed regular rice with sticky rice in a certain ratio, then soaked in water for 4-5 hours.

After soaking the sticky rice and mixed rice, dry them and grind them. Next, steam the rice flour until it is well-cooked and then pound it. Once it is soft, start shaping it into a cake as big as a brick.

When kneading, you must do it quickly, because if the dough cools, it will not stick together.

The colorful Ha Giang Stone Cakes are made from natural ingredients such as pandan leaves, purple leaves, butterfly pea flowers, turmeric, and gac fruit. When combined with these leaves, the Stone Cakes also have a more delicious flavor.

Currently, to meet market demand and serve tourists, many Da cake production facilities have been established in Ha Giang province.

One of them is Trung Hieu Cooperative, Ms. Phung Thi Thu Minh, owner of the cooperative in Phong Quang (Vi Xuyen district) shared: "Currently, our cooperative has 2 facilities, one main facility in Dong Van district and the second facility in Phong Quang commune.

Every day, at facility 2, about 500 kg of finished Stone Cake are produced. To serve customers with ease of processing and to meet individual tastes, the Cooperative has launched many types of Stone Cake such as: Shredded, sliced and round cakes...

Besides, to increase the productivity of making Stone Cake, we have applied machines such as: Powder grinder, cake press, vacuum machine. Thereby basically providing enough demand of the market...".

Ha Giang Stone Cake has an oblong shape, with many different flavors such as gac, butterfly pea, turmeric, and purple sticky rice.

Ms. Voong Thi Thao, a tourist from Tuyen Quang shared: "Watching Tiktoker reviews online made me very curious, wondering what Banh Da would taste like?

Then there are people who say that when they first bought the cake, it was literally “hard as a rock”. Even if you put two cakes together, they would make a cracking sound like two rocks.

Introduced like that, but when the Banh Da dish is prepared, it creates an “addiction” for the members of my family. Banh Da has a rich, fragrant taste, has a moderate chewiness, is easy to eat and is suitable for all ages in the family…”.

Many young people point out countless ways to eat it such as: hot pot, thang ren, and the easiest way is to fry it, then dip it in chili sauce, white sugar or condensed milk... depending on each person's taste.

With its appeal, Banh Da has become a promotional product for Ha Giang and is sought after by the culinary community because of its unique name and eye-catching appearance, captivating with its light sweetness, aroma and combined chewiness.
