Crab noodle soup is a dish that seems very typical of the Southern people, but Ms. Lan learned and researched from a chef from the Central region. Ms. Lan shared: "7 years ago, I accidentally learned about a noodle dish cooked by a Central Vietnamese person, with a very strange flavor. Although it was made from ingredients that seemed very "Southern", but according to a very special recipe, the dish was very unique. After the conversation, I was guided by the chef and through the way he spoke, I could somewhat imagine how to cook this dish. I tried cooking and gradually became quite successful. Initially, I opened a restaurant at 341, Tran Phu, Ward 7, Bac Lieu City, in 2015".

In fact, banh canh xua is a typical dish of the Southern people with homemade tapioca flour noodles, soup mixed with coconut milk, shrimp and meat. This dish is very delicious but easier to get bored of than banh canh cooked in the Central style.

Ms. Lan shared that with basic ingredients such as homemade noodle powder, shrimp, crab, quail eggs, meat, rich and eye-catching broth, the flavor of this noodle soup is easier to eat and digest than the traditional Southern style, so it is popular with customers. At first, the customers gave good feedback when testing the dish. Children especially love it because it is easy to eat and nutritious. Adults are surprised because this noodle soup is very different from the original version they have eaten.

Central Vietnamese noodle soup has a dark yellow color, crab meat is selected from the pre-separated part, the broth has a strong sweetness of bone broth, accompanied by crab cakes that are deliciously prepared and have a unique flavor. Crab noodle soup is not served with bean sprouts like regular noodles or pho, but with a little baby green cabbage to create a different feeling, not boring, not bland. Each bowl costs from 40,000 to 80,000 VND depending on the choice of servings. The price may seem higher than other dishes, but when enjoying a bowl of thick noodle soup with all kinds of shrimp, crab, meat, and eggs mixed together, diners will feel that it is worth the money they spend.

After a period of standing firm in Bac Lieu, the old banh canh brand Hoang Lan began to expand its market to Ca Mau , located at 8A, Tran Hung Dao, Ward 5, Ca Mau City. According to Ms. Lan, the expansion to other localities is a driving force for her brainchild to develop over time. Thanks to the delicious and unique flavors of the dishes, the banh canh shop attracts many customers to enjoy and support.

Ms. Phan Thuy Duong, Dong Hung commune, Cai Nuoc district, shared that when Hoang Lan noodle soup appeared in Ca Mau, she and her friends came to enjoy it.
