- Lean meat: 1kg (Should choose lean pork butt or fresh pork loin, no fat).

- Pork skin: 300gr (Choose clean pork skin, shave off hair thoroughly).

- Rice bran: 100gr (rice bran is fragrant roasted rice powder, can be bought ready-made or made yourself).

- Spices: Salt, sugar, MSG, garlic, chili (depending on taste).

- Banana leaves and nylon paper: To wrap spring rolls.

Polyscias fruticosa leaves (optional): Helps enhance the characteristic flavor of spring rolls.

How to make nem chua at home

Step 1: Prepare ingredients

Wash the lean meat, cut into small pieces, then use a blender or knife to mince it. Note, the meat needs to be ground or minced thoroughly so that the spring rolls are smooth and sticky.

Boil pork skin, scrape off remaining fat, slice thinly. Chop garlic and chili, wash and drain the galangal leaves.

Step 2: Mix ingredients

Put the minced meat in a large bowl. Add the spices: salt (about 1-1.5 tablespoons), sugar (about 1-1.5 tablespoons), MSG (1 teaspoon), minced garlic, minced chili (if you like it spicy); can be adjusted to taste.

Finally, slowly add the rice bran and mix well so that the bran sticks to the meat and skin mixture.

Step 3: Wrap the spring rolls

Spread banana leaves lined with plastic wrap on a flat surface. Take a sufficient amount of the mixture of meat, pork skin, rice powder, sliced garlic, and sliced chili and place it on the plastic wrap wrapped in banana leaves. If you like, you can add Vietnamese coriander leaves in the middle of the spring rolls to enhance the flavor.
