Top Chef Vietnam – Top Chef Season 2 2019
Continuing to accompany Top Chef Vietnam as the main judge, Alain Nguyen - Chairman of the Ho Chi Minh City Chefs Association said: “This year, I am looking for chefs who understand the value of Vietnamese ingredients. The value of our culinary culture is thousands of years old, our ingredients are thousands of things, we can never run out of them, but foreigners do not know, so we have to bring them up. And behind that is the story of the ingredients. I think it has to be like that”. Growing up in Australia, judge Luke Nguyen always sees his goal and mission in life as spreading Vietnamese cuisine to the world. He shares about his love for Vietnamese cuisine: “For me, Vietnamese cuisine is one of the most sophisticated cuisines from Southeast Asia, even the world. Many people know that Vietnamese culinary culture is a very sophisticated, easy-to-eat, elegant and nutritious cuisine, so Vietnamese cuisine can be said to be the best”.
In addition, judges specializing in the fields of food and beverage (F&B), hotel business, and Dining restaurants will bring chefs perspectives from new trends in food, especially customer experience when providing services. Judge Peter Cuong commented that Top Chef Vietnam is a great opportunity to discover young talents and develop the future of Vietnamese cuisine, leading a Vietnamese restaurant to enter the "Top 50 Best Restaurants in Asia" and achieve Michelin stars in the future. "Most people in the world only know street foods such as Pho, Banh Mi, Goi Cuon and Ca Phe Sua. We need to change this perception and create the ability for Vietnamese cuisine to provide both delicious street foods and traditional dishes but also creative high-end dishes", judge Peter Cuong emphasized. Having worked in the restaurant industry for 15 years and having a wealth of culinary experience around the world, judge Dao Anh Tuan, Chairman of FnbChain Joint Stock Company, brings valuable experience in fine dining: “In my opinion, a chef who can prepare delicious dishes needs four factors: basic knowledge and skills; understanding of ingredients; creativity in dishes; and artistry. Chefs must understand that in addition to cooking delicious dishes, if they want to present them beautifully, they must understand painting, the art of arrangement, and trends. Finally, to cook dishes, they must have Vietnamese identity.”
Artisan Phan Ton Tinh Hai emphasizes that uniqueness and individuality are among the five elements that make Vietnamese cuisine "imprinted".
Based on his experience, judge - Culinary Artist Phan Ton Tinh Hai pointed out 5 factors that chefs need to demonstrate to "make their mark" on Vietnamese cuisine, including: deep and correct understanding of Vietnamese culinary culture; having a basic foundation and skillful processing skills; closely approaching world cuisine, with new trends of the global market, having a creative spirit and constantly learning, and finally, the most important is uniqueness, a unique personality". The competition consists of main judges, professional judges and guest judges. Top Chef 2023 is led by Miss H'Hen Nie.
At the program launch event, with the approval of the Vietnam Culinary Culture Association (VCCA), TVHub - the copyright holder of Top Chef Vietnam - signed a strategic cooperation agreement with the Vietnam Young Chefs Association (YCA), according to which YCA will be the unit accompanying young chefs to inherit the quintessence of Vietnamese cuisine and bring it to the world. Mr. Duong Quoc Nam - the new President of the Vietnam Young Chefs Association (YCA), said: "Culinary artists, previous generations of chefs will share their experiences, experiences, and secrets with younger people so that the number of good chefs will increase exponentially, promote the spirit of Vietnamese cuisine and help Vietnamese dishes be widely promoted domestically and internationally".
