- In recent times, Hai Ha Lang Son Cooperative, Ban Du village, Van Thuy commune, Chi Lang district has focused on investing in modern equipment to produce yeast wine. Thereby, contributing to improving the quality of traditional wine, aiming to turn the product into an OCOP product (One Commune One Product program).
Leaf yeast wine is a traditional product of the Nung ethnic group in Van Thuy commune, Chi Lang district. However, in the past, households only produced on a small scale and had not yet built their own brand. In 2023, Hai Ha Cooperative was established with 7 members, with the purpose of connecting households with a tradition of brewing wine to produce and build a brand for the leaf yeast wine products of the Nung ethnic group here.
Mr. Ngo Quang Hai, Director of the Cooperative, said: In traditional wine production, water source and yeast cake determine 80% of wine quality. Therefore, I chose to build a factory with an area of over 500m2 on the top of Khau Sung mountain (the highest mountain in Van Thuy commune), Ban Du village, Van Thuy commune - where there is a source of pure, cool spring water. In addition, the rice chosen by the Cooperative to make wine is delicious bao thai rice, ensuring quality. For yeast cake, the Cooperative produces its own leaf yeast using the traditional method from about 15 herbs picked by people in the forest.
In addition, to improve the quality of traditional wine, aiming at the goal of building OCOP products, the cooperative focuses on investing in and producing wine using traditional methods combined with the application of modern technology. Accordingly, the cooperative has invested in a system of machinery worth nearly 1 billion VND including: rice cookers; machines to remove Andehit and Methanol toxins; aging machines... In particular, the cooperative uses the traditional method of distilling wine, burning with firewood. According to Mr. Hai, cooking wine with a manual pot has a lower productivity per batch than cooking with electricity, but the quality of the wine will be more fragrant and delicious. Currently, the cooperative cooks about 2 quintals of rice per day on average. After distillation, the wine will be put into the Andehit detoxification machine and aging machine, then aged for 36 months before being sold.
In order to build a brand in the market, striving to bring products to meet OCOP standards, the Cooperative also focuses on investing in packaging design and product models. Currently, the Cooperative has registered the brand for the product as "Tinh Nung yeast wine", the product is bottled, has full labels, traceability and ensures food safety.
Currently, the cooperative's yeast wine products are consumed in many provinces and cities and there are nearly 20 agents nationwide. On average, the cooperative consumes nearly 10,000 liters of wine per month. In 2023, the cooperative's revenue will reach over 1 billion VND.
Ms. Vy Thi Ninh, Ban Du village, Van Thuy commune, a member of the cooperative, said: In the past, my family and other households in the village only brewed yeast wine on holidays and Tet to serve the family's needs. Since the establishment of Hai Ha Lang Son Cooperative, I have joined as a member working at the cooperative. Every day, I do tasks such as making yeast, fermenting rice, and distilling wine. Every month, my income is from 5 to 6 million VND.
Mr. Linh Duc Tien, Chairman of the People's Committee of Van Thuy Commune, Chi Lang District, said: Hai Ha Lang Son Cooperative is a typical cooperative in the production of traditional yeast wine. In 2024, the commune selected the cooperative's yeast wine products to participate in the OCOP program and is in the process of completing the dossier. Through this, it will help the cooperative continue to preserve and further develop the traditional wine products of the Nung ethnic group in Van Thuy Commune.
It is known that in the coming time, Hai Ha Lang Son Cooperative will continue to invest in multi-layer distillation towers using European technology to expand production scale and supply products to the market in larger quantities. Along with that, the Cooperative will continue to carry out promotional programs and introduce yeast wine products to stores and agents to expand the consumption market and create a stable position for the product in the market.
