Hue City is a locality that is assessed by experts to have the potential and strength to participate in the UNESCO Creative Cities Network in the culinary field. On July 10, 2024, the People's Committee of Hue City issued a Plan on building a dossier "Hue - Creative City" to nominate to join the UNESCO Creative Cities Network. The locality decided to choose Cuisine to build a dossier to join the UNESCO Creative Cities Network in the field of culinary creativity of Hue City. The diversity of raw materials, from rustic to delicacies with the skillful hands of artisans, chefs, and culinary professionals from the common people to the upper class, aristocrats... increasingly affirms the Hue culinary brand. Currently, Hue is urgently building a dossier to join the UNESCO Creative Cities Network in the culinary field.
Mr. Hoang Trong Nghia, from Bac Giang province, was impressed with the food in Hue when he traveled to Hue city: “I am very impressed with the traditional cuisine of Hue, especially the dishes, the cuisine is very diverse and very eye-catching. Today, I had the opportunity to come to Hue. It is really impressive”.
Hue cuisine has up to 1,700 dishes out of a total of 3,000 Vietnamese dishes recorded in the Nguyen Dynasty's Code of Conduct with three main culinary genres: folk, royal and vegetarian cuisine. Today, Hue still preserves and maintains many traditional cultural features and one of the outstanding characteristics of Hue culture is culinary culture. The dishes are attractively and skillfully prepared, focusing on quality over quantity, with beautiful presentation and sophisticated enjoyment. Hue folk cuisine is diverse, strongly influencing the unique characteristics of Central cuisine and creating a wide influence throughout the country. Hue royal cuisine is specifically recorded in bibliographical documents, with annals, with enough details about culinary institutions, menus of hundreds of luxurious dishes, and the formalities and rituals of eating in the royal court. It is a valuable archive, reflecting the achievements of Vietnamese culinary culture.
Ms. Phan Ton Tinh Hai, a Vietnamese culinary artist, said: “We are very eager to spread Hue cuisine and the value of Hue traditional cuisine to the country and the world through many angles. How can the value of Hue traditional culinary culture reach everyone in the country and the world in terms of ingredients, nutritional value, aesthetic value and also the traditional value of Hue traditional dishes?”
Currently, Hue city and Thua Thien Hue province are urgently completing the nomination dossier to join the UNESCO Creative Cities Network in the field of gastronomy. Hue possesses a huge heritage of culinary culture, not only imbued with tradition but also rich in creativity. This is a completely suitable foundation for Hue to become a UNESCO Creative City in the field of gastronomy.
Mr. Nguyen Thanh Binh, Vice Chairman of the People's Committee of Thua Thien Hue province, said: In recent years, the province has always promoted the brand "Hue - Culinary Capital" with many activities promoting tourism and unique culinary culture, attracting the attention and experience of a large number of domestic and international tourists, contributing to improving the income of the people: "With Hue city participating in the UNESCO creative network city, we also assigned the responsibility to the People's Committee of Hue city, the Department of Culture, Sports, and Tourism to develop this project, to protect with UNESCO around the end of 2025. In addition to the titles of ASEAN cultural city, green tourism city, Hue will have a brand in the UNESCO creative city".
