Hue City is considered by experts to have the potential and strengths to participate in the UNESCO Creative Cities Network in the field of gastronomy . On July 10, 2024, the People's Committee of Hue City issued a plan to build a dossier on "Hue - Creative City" for nomination to join the UNESCO Creative Cities Network. The locality decided to choose gastronomy as the focus of its dossier for participation in the UNESCO Creative Cities Network in the field of culinary creativity. The diversity of ingredients, from simple to exquisite, combined with the skillful hands of artisans, chefs, and food professionals from the common people to the elite, is increasingly affirming the brand of Hue cuisine. Currently, Hue is urgently building its dossier to join the UNESCO Creative Cities Network in the field of gastronomy.
Mr. Hoang Trong Nghia, from Bac Giang province, was impressed with Hue's cuisine while traveling in Hue: "I am very impressed with Hue's traditional cuisine, especially the dishes; they are very diverse and visually appealing. Today, I had the opportunity to visit Hue. It was truly impressive."
Hue cuisine boasts 1,700 dishes out of the 3,000 Vietnamese dishes listed in the Nguyen Dynasty's "Hoi Dien" (Academy of Dishes), encompassing three main culinary styles: folk, royal, and vegetarian. Today, Hue preserves many traditional cultural aspects, and one of its most prominent features is its culinary culture. The dishes are prepared attractively and skillfully, prioritizing quality over quantity, with beautiful presentation and refined dining techniques. Hue's folk cuisine is diverse, strongly influencing the unique characteristics of Central Vietnamese cuisine and having a wide-ranging impact throughout the country. Hue's royal cuisine is meticulously documented in historical records, providing detailed accounts of its culinary structure, menus of hundreds of luxurious dishes, and dining rituals within the royal court. This is a valuable archive reflecting the achievements of Vietnamese culinary culture.
Ms. Phan Ton Tinh Hai, a Vietnamese culinary artist, stated: “I am very eager to spread Hue cuisine and the traditional culinary values of Hue to both domestic and international audiences through many perspectives. How can we ensure that the traditional culinary values of Hue reach people both domestically and internationally in terms of ingredients, nutritional value, artistic value, and the traditional significance of Hue dishes?”
Currently, Hue City and Thua Thien Hue Province are urgently finalizing their nomination dossiers to join the UNESCO Creative Cities Network in the field of gastronomy. Hue possesses a vast culinary heritage, not only deeply rooted in tradition but also rich in creativity. This provides a perfectly suitable foundation for Hue to become a UNESCO Creative City in the field of gastronomy.
Mr. Nguyen Thanh Binh, Vice Chairman of the Thua Thien Hue Provincial People's Committee, said: "In recent years, the province has always promoted the brand 'Hue - Culinary Capital' with many activities to promote tourism and unique culinary culture, attracting the attention and experiences of a large number of domestic and international tourists, contributing to improving the income and living standards of the people. Regarding Hue City's participation in the UNESCO Creative City Network, we have also assigned responsibility to the Hue City People's Committee, the Department of Culture, Sports and Tourism, and the Department of Tourism to develop this project, to be presented to UNESCO around the end of 2025. In addition to the titles of ASEAN Cultural City and Green Tourism City, Hue will have a brand within the UNESCO Creative City Network."
