Can diabetics eat spinach?
Spinach is also known as spinach or spinach. This is a green vegetable of the amaranth family, containing many vitamins and nutrients that are good for health.
Spinach has high nutritional value such as being rich in iron, vitamin C, A to help the body increase resistance. Vitamin K and calcium are very good for bones and teeth. In addition, spinach also contains many carotenoids with antioxidant properties, fighting against malignant cells in the body.
A study conducted by Shahid Beheshti University of Medical Sciences (Tehran, Iran) investigated the effects of spinach extract on diabetic wound healing. In it, spinach extract was tested on mice that were induced to have diabetes.

Researchers measured ulcer healing, blood sugar, vascular endothelial growth factor, and weight change in diabetic mice.
The results showed that spinach extract could improve diabetic ulcers and vascular endothelial growth factor, improve blood sugar levels, as well as help lose weight in diabetic mice and shorten recovery time.
The results also showed that the use of spinach extract before the induction of diabetic ulcers resulted in a higher recovery rate. This suggests that the preventive effect of spinach in ulcer healing is even stronger.
Notably, average blood sugar levels in the prevention groups dropped significantly below the threshold for diabetes.
The researchers concluded: The findings indicate that spinach extract, especially the alcohol extract, can accelerate ulcer healing time in diabetic rats. It also improves blood sugar levels and reduces weight loss due to diabetes. This extract can be used to effectively treat chronic diabetic ulcers.

Remove oxalic acid before eating
Spinach is one of the seasonal vegetables on everyone's dining table. Before stir-frying spinach, blanch it in boiling water, which can remove the oxalic acid in spinach. Only by removing the oxalic acid can the body absorb the calcium in spinach. Otherwise, it will not only affect the taste but also reduce the nutrition.
Should eat the whole root vegetable
When people choose spinach, they have a habit of throwing away the roots. In fact, spinach roots are rich in nutrients, containing cellulose, vitamins and minerals. Eating spinach with ginger can prevent diabetes.
However, the blood sugar lowering ability of spinach is limited and it is usually used in the prevention of hyperglycemia.

People with a history of kidney stones
When a lot of oxalic acid accumulates due to eating a lot of spinach, it will be difficult for the body to excrete it. Calcium oxalate stones accumulate in the kidneys, increasing the risk of kidney stones.
People with bone and joint diseases
In addition to oxalic acid, spinach also contains a lot of purine. These two compounds combined can cause gout. For diseases of joint pain, swelling, inflammation, eating too much spinach can make the symptoms worse.
People taking anticoagulants
Spinach is a rich source of vitamin K, but it may react with anticoagulants used for blood thinning purposes, or affect other clotting factors present in the blood.
