Ingredients : Dandelion, dried shrimp, chicken eggs, green onions, salt, sesame oil, cornstarch, flour, starch

Making:

- Wash fresh dandelion leaves, blanch in water to cool, squeeze out excess water, cut into small pieces and set aside.

Crack 2 eggs into a bowl, add a pinch of salt, stir quickly and set aside;

Finely chop the green onions and set aside.

Dandelion Steamed Buns

- Heat cooking oil in a pan, pour in egg mixture and stir-fry until eggs are soft, stir quickly with chopsticks to break the eggs into small pieces, let cool and set aside.

- Put dandelion leaves, chopped eggs, chopped green onions and dried shrimp in a bowl, add a little flour and cornstarch, add salt and sesame oil and stir well.

- Divide the mixed filling into small portions and form into round vegetable dumplings. Put the starch in a bowl, put the vegetable dumplings in the bowl, roll a few times to coat the vegetable dumplings with a layer of starch.

-Put water in a steamer, bring to a boil, put the vegetable dumplings in the steamer over high heat for about 6-8 minutes until cooked, then turn off the heat and take out to serve.

Steamed buns can be eaten directly or dipped in garlic and chili sauce for added flavor.

3. Dandelion Salad

Ingredients (adjust according to serving size): Dandelion leaves, canola oil, lemon juice, eggs, onions, grapefruit or tangerine.
