Cool down and aid digestion with pickled star fruit
According to Traditional Medicine Practitioner Bui Dac Sang ( Hanoi Oriental Medicine Association), pickled or boiled fresh star fruit juice helps cool down on summer days and is good for your health. The sour taste of star fruit stimulates the digestive system to work better, eliminates toxins, and improves digestion.

In Oriental medicine, there are some cough remedies made from star fruit. For example:
+ Use about 15 - 20g of star fruit pulp soaked with a little salt and gargle about 3 times/day regularly to help reduce cough well.
+ Use about 20 - 30g of star fruit cooked with 300ml of water, wait until it is reduced to 100ml then turn off the stove. Drink about 2 times a day. This drink is even more effective when cooked with just water because honey has good antibacterial, anti-inflammatory and antioxidant properties, so it is effective in treating coughs.
Pickled crocodile water is prone to scum if not soaked properly.
How to soak sour plums to make them crispy and delicious without floating scum
Ingredient
+ 2kg crocodile
+ 3 kg sugar
+ 2 - 3 ginger roots.
+ Clean the glass jar and let it dry thoroughly first.
How to soak:
After buying the star fruit, clean it and use a knife to peel it. Remember to put it in a basin of diluted salt water after peeling it so that the star fruit does not turn black. After washing it, you can lightly hit it or use a small knife to make spiral cuts around the star fruit if you want the pickled star fruit to be eaten faster.
After cutting each star fruit, soak it in diluted salt water to prevent it from turning black, then rinse with clean water.
Blanched star fruit will have a beautiful color and will not float when soaked.
An important step to soak the star fruit so that it is crispy and delicious without floating scum is to boil a pot of water and blanch the star fruit until it turns yellow. Then, pour the star fruit into a colander to cool and dry.
There are 2 ways to soak star fruit to make it delicious and crispy without scum:
+ Method 1: Put a layer of star fruit in the jar, then pour a layer of sugar on top, and continue like that until all the star fruit and sugar are gone. Leave the jar in a dry place and cover tightly for about 1 day to let the sugar dissolve and soak into the star fruit. At that time, a small amount of undissolved sugar will sink to the bottom, pour the star fruit juice into a pot, add a little salt and bring to a boil. Add a little crushed ginger for fragrance. Boil the star fruit juice for about 3 minutes, then turn off the stove and wait for the water to cool, then pour it back into the jar with the star fruit.
+ Method 2:
Before soaking the star fruit, boil the sugar water. When the sugar water boils, add the crushed ginger for fragrance then turn off the heat. Wait for the water to cool completely then add the star fruit to soak.
