Making rice paper is a long-standing family tradition of Ms. Nguyen Thi Ha (born in 1985, residing in Hamlet 6, Cam Xuyen town). Therefore, after getting married, Ms. Ha brought the family trade to her husband's home to start her own business. In the early days, she made the rice paper manually, using flour ground with a stone mill and hand-rolled. Over the years, Ms. Ha accumulated capital and invested in machinery to develop her family's traditional craft.

Ms. Nguyen Thi Ha shared: “I have been involved in the rice paper production business for nearly 17 years. Starting with manual production, in 2012, I invested in an electric flour grinder and a rice paper making machine. In 2022, to build an OCOP brand, I invested more than 1 billion VND to renovate the workshop and purchase modern machinery such as a high-capacity rice paper making machine, a rice paper baking machine, a rice washing machine, and a packaging machine.”

To retain customers, Ms. Nguyen Thi Ha must maintain her family's traditional cake-making recipe throughout the production process. To make delicious cakes, she usually soaks the rice overnight, then washes and grinds it into flour the next morning. She also selects only the finest sesame seeds, soaking them to remove any broken grains, washing them thoroughly, draining the water, and then mixing them into the flour.

Before making the pancakes, Ms. Ha adds a little salt to the batter to enhance the flavor. When baked, the pancakes are crispy, with the nutty taste of rice, the aroma of sesame seeds, and the rich flavor of salt and spices.

After much effort, in March 2023, Ha Tam sesame rice crackers were recognized as meeting OCOP 3-star standards. Since receiving this certification, sales have increased, and the family's income has improved significantly.

“After achieving OCOP 3-star certification and participating in exhibitions and fairs inside and outside the province, the number of customers coming to the facility to place orders has increased significantly. Every day, the facility produces 3-4 quintals of rice and bakes 5,000-6,000 rice crackers. Recently, a supermarket in Hanoi even inquired about signing a distribution agreement, but currently, the facility's production is still insufficient to meet the demand, so we haven't signed the agreement yet,” said Ms. Nguyen Thi Ha, owner of the Ha Tam sesame rice cracker production facility.

The Ha Tam sesame rice cracker production facility is currently providing regular employment for 6 workers.

Currently, Ha Tam sesame rice crackers are not only available in most eateries and markets in Cam Xuyen and surrounding areas, but are also ordered by customers from other provinces such as Dong Nai , Thai Binh, Nghe An, Hanoi, etc.

In the first nine months of 2023, the production and sales facility produced approximately 1.5 million rice crackers, generating revenue of over 1 billion VND. The production and revenue for the first nine months of 2023 equaled the total for the entire year of 2022. Not only does it provide a stable income for the family, but the Ha Tam sesame rice cracker facility also creates regular employment for six workers with salaries ranging from 5 to 6 million VND per person per month.

Mr. Pham Van Dan, Secretary of the Party Committee of Cam Xuyen town, said: “Ha Tam sesame rice crackers are the first 3-star OCOP product of the locality. Because the crackers have been recognized as a 3-star OCOP product, customers are very confident about the production process, product quality, and food safety and hygiene.”
