Iron shrimp: Small size, sweet and rich meat.
Prawns (sea): Live prawns are pink-white in color and have blue eyes.
Prawn: Plump body, sweet meat, crispy shell.
Freshwater shrimp: Fresh shrimp will have a straight or slightly curved shape.
Fresh shrimp has firm flesh - best if it is live or freshly caught. Fresh shrimp has a transparent green body, shiny shell, tightly attached to the meat, not slimy or rough. Fresh shrimp has a slightly curved body, tight shell joints, head and body tightly attached, shrimp legs are transparent and attached to the body, not black or loose.
Smell fresh shrimp, you can clearly smell the characteristic fishy smell (no unpleasant odor).

Make sweet and salty minced pork braised shrimp at home
Ingredients for sweet and salty minced pork braised shrimp
300g whiteleg shrimp
400g minced shoulder or belly
7 shallots, 5 cloves of garlic, 1 tablespoon ground pepper, 2 tablespoons fish sauce, 2 tablespoons sugar, 2 teaspoons MSG, 1 tablespoon salt, 1 large clove of green onion, 2 tablespoons cooking oil.
Prepare ingredients for sweet and salty minced pork braised shrimp
Marinate shrimp and meat separately.
- Add 1 teaspoon of MSG to the shrimp.
- Add another spoon to the pork belly.
Add 1 teaspoon of salt, 1 teaspoon of sugar, 2 teaspoons of anchovy fish sauce, a little chopped shallot to each ingredient and mix well, let marinate for 15 minutes to absorb.
How to braise sweet and salty minced shrimp and meat
Place pan on stove, add 2 tablespoons cooking oil, add 1 tablespoon sugar and stir until sugar turns caramel color, then add minced meat and stir well.
Add minced shallots and garlic and stir for another 3 minutes.
Add fish sauce and sugar to taste.
Add shrimp and stir until it turns golden brown, then add 100ml of water to the pot. Continue to cook the ingredients for 20 minutes until the water in the pot of braised shrimp and minced pork is dry.
Turn off the heat, remove from heat and sprinkle with chopped green onions, ground pepper, and chili.
