Fresh shrimp has firm flesh - best if it is live or freshly caught. Fresh shrimp has a transparent green body, shiny shell, sticks to the meat, not slimy or rough. Fresh shrimp has a slightly curved body, tight shell joints, head and body stick together, shrimp legs are transparent and stick to the body, not black or loose.

Make sweet and salty minced pork braised shrimp at home
Ingredients for making sweet and salty minced pork braised shrimp
300g whiteleg shrimp
400g minced shoulder or pork belly
7 shallots, 5 cloves of garlic, 1 tablespoon ground pepper, 2 tablespoons fish sauce, 2 tablespoons sugar, 2 teaspoons MSG, 1 tablespoon salt, 1 large clove green onion, 2 tablespoons cooking oil.
Prepare ingredients to make sweet and salty minced pork braised shrimp
Marinate shrimp and meat separately.
- Add 1 teaspoon of MSG to the shrimp.
- Add another spoon to the pork belly.
Add 1 teaspoon of salt, 1 teaspoon of sugar, 2 teaspoons of anchovy fish sauce, a little chopped shallot to each ingredient and mix well, let marinate for 15 minutes to absorb.
How to braise sweet and salty minced shrimp and meat
Place the pan on the stove, add 2 tablespoons of cooking oil, add 1 tablespoon of sugar and stir until the sugar turns caramel, then add the minced meat and stir well.
Add minced shallots and minced garlic and stir for another 3 minutes.
Add fish sauce and sugar to taste.
Add shrimp and stir until it turns golden brown, then add 100ml of water to the pot. Continue to boil the ingredients for 20 minutes until the water in the pot of shrimp and minced pork is dry.
Turn off the stove, remove from heat and sprinkle chopped green onions, ground pepper, and chili.
