My family wrapped a lot of banh chung for Tet and stored it in the refrigerator until the full moon of January. Will we be able to eat it then? (Huyen, 31 years old).
Reply:
Banh chung can be stored in the refrigerator for 3-4 weeks and can still be eaten if you store it properly. If you keep it in the refrigerator, the temperature needs to be maintained at 4 degrees, or you can store it in the freezer. When you take it out, the cake will not be moldy or sour but will still be normal, just frozen, can be thawed and eaten.
However, if the cake shows signs of water leakage, rancid smell, or sliminess in the crust, it should not be processed and must be discarded because bacteria can enter and spoil the cake, easily causing digestive disorders and poisoning.
In general, you need to carefully observe the shape, taste and color of the cake to make a judgment. In fact, any food, not just banh chung, if left in the refrigerator for too long, the ingredients of the cake will change. The cake does not show signs of spoilage, and reprocessing it will not be as delicious as the original. It is best to try to eat it all as soon as possible, do not leave it for too long.
Many families fry the cake with oil to change the taste, but this method is not recommended because regularly eating fried banh chung will add a large amount of fat to the body, which is not good for health.
The best way is to cut the cake into small pieces, then boil or microwave, or place on the rice cooker to steam. This way, the cake will be soft again, still delicious, and less toxic.
