Major American newspapers report on Vietnamese dish of vermicelli with fermented shrimp paste

The article about Mam restaurant in the US was published by The New York Times in the middle of last week. Accordingly, this restaurant serves vermicelli with fermented shrimp paste, which is very popular in the capital Hanoi - Vietnam in particular and many other regions of the S-shaped strip of land in general.

The New York Times reported that Mam restaurant was established in the Lower East Side residential area, New York City - USA since September 2020. One of the owners is Nhung Dao. All the ingredients to make vermicelli with shrimp paste are purchased in New York City.

Since February this year, the "Mam" restaurant has been open three days a week. Diners can make reservations in advance on the online platform Hotplate. Each portion of vermicelli with fermented shrimp paste here costs 32 USD, equivalent to nearly 800,000 VND.

On cold or rainy days, diners can only sit in the dining room, which can accommodate nearly 20 people. When the weather is nice, diners can sit outside on low plastic chairs to enjoy a tray of vermicelli with fermented shrimp paste and watch the streets, just like the sidewalk eateries in Hanoi.

The New York Times describes diners enjoying the dish by taking a piece of tofu along with vermicelli and dipping it into a bowl of shrimp paste - which may include red chili, with a few drops of lemon juice to create a dipping sauce that is both delicious and "scary".

The tofu is made by Mam restaurant itself. When fried, the inside of the tofu has a rich and chewy flavor, like mozzarella sticks.

Despite its small scale, Mam restaurant contributes to promoting one of the unique Vietnamese dishes in America.
