Add 500g of sugar and a little salt to the bowl of green papaya, then shake well. Marinate the green papaya for 2-3 hours to let the sugar soak in.

Put the pan on the stove and add the marinated star fruit. Cook over high heat until the star fruit boils, then turn down to low heat. Simmer the star fruit for 45 minutes - 1 hour until the star fruit turns red and the sugar water thickens, then add 900ml of filtered water. Cook for about 10 more minutes then turn off the stove.
