Nem nam - a specialty of Nam Dinh people, the recipe has been passed down from generation to generation to create a rustic dish with a unique flavor. Mr. Pham Van Dong - a son of Thanh Nam who came to Da Teh to live and work, and his family continues to preserve the flavor of their homeland in the new economic zone. Skillfully and meticulously wrapping each nem, Mr. Dong excitedly said that today, when mentioning delicious dishes, regional specialties, the nem nam of Nam Dinh people is also listed in the group of famous cuisines, not to be missed when coming to the delta. Therefore, he himself feels very proud that his family can develop the traditional dish of his hometown and is known by many people.
Mr. Dong shared that instead of chasing market output, he especially focuses on product quality. Therefore, right from the stage of choosing raw materials, he is very strict. “I always choose fresh pork, freshly slaughtered from the business household with which the facility has signed a raw material contract. The meat for making nem must be the butt because the meat is soft, has both fat and meat but less fat and the fat separates from the meat and has a fatty taste. When making nem, the butt is soft, easy to squeeze the nem and brings the best flavor to the dish. Along with that, the accompanying spices are also carefully selected,” Mr. Dong said.

To make a standard spring roll, in addition to being meticulous in selecting ingredients, the processing stage also requires carefulness and concentration from the maker. After cleaning, pre-processing and boiling the pork, it will be hand-sliced, then marinated with the facility's own recipe. Then add rice bran and squeeze it evenly, wrap the finished product in dong leaves, and finally put it in a PE bag for storage. "Da Pal spring roll is a delicate combination of many complementary spices. The salty taste of fish sauce combines with the sweetness of meat, the fragrant taste of bran, and the spicy taste of chili. All create a unique, delicious and rich dish," said Mr. Dong.
According to Mr. Nguyen Tat Quyet - Secretary of the Party Committee of Da Pal commune, currently, Da Pal's nem nam products are well received by consumers and have a relatively stable output. In the coming time, Da Pal commune aims to build and develop nem nam into an OCOP product. At the same time, connecting e-commerce platforms to widely promote products to many customers, as well as maximizing reach.
Nem nam Pham Dong is not only known and loved by people in Da Pal commune but also sought after by many people in the district to enjoy or treat friends whenever they have the opportunity to visit Da Teh. With the orientation of developing Nem nam Da Pal into a typical product, along with putting the product on the e-commerce platform, we are confident that in the near future, the dish with the typical flavor of Nam Dinh produced in Da Teh district will be promoted and reached a large number of consumers in the provinces and cities in the Southern region.
