Processing:
Step 1: Wash the plums, remove the ends and stems, then cut them in half lengthwise. Next, soak the plums in diluted salt water for about 10 minutes to prevent them from turning brown, then remove and place in the refrigerator to keep them crispy.
Wash the lean meat, boil it, add some ginger and salt to reduce the smell. Then cut the meat into thin slices.
Remove the black vein and vertical thread from the shrimp legs, clean and marinate with salt, sugar and pepper. Wash the carrots, cut into strips and soak in ice water until crispy. Next, prepare the basil, shallots, etc., pick and chop them.
Step 2: Saute garlic until fragrant, add shrimp and stir well over low heat to absorb the spices.
Mix fish sauce, lime juice, sugar, chili, minced garlic into garlic dressing. Next, add plums, pork, shrimp, carrots, and shallots into a large bowl and mix well with the dressing just made.
When serving, sprinkle peanuts on top. The salad is delicious served with shrimp crackers.
