How to make delicious garlic duck
Step 1: First, rub salt, vinegar, and ginger on the duck meat, then wash it and cut it into bite-sized pieces. You can also blanch it with a little ginger and shallots.
Cut the duck into bite-sized pieces and put in a bowl.
Step 2: Marinate the duck meat with 3 teaspoons of fish sauce, 1 teaspoon of oyster sauce, 2 teaspoons of chili sauce, 1 teaspoon of seasoning powder, 1 teaspoon of pepper, 1/2 packet of five-spice powder, 1 teaspoon of annatto oil. Along with 3 lemongrass stalks, 1 small galangal root, 1 small piece of grated ginger and 2 tablespoons of filtered water, leaving both the residue and the marinade with the meat.
Marinate the meat with spices for rich flavor.
Step 3: After marinating the duck meat for 30 minutes, add 2 tablespoons of fried noodle powder and mix well.
Add 2 tablespoons of fried flour to the marinated duck.
Step 4: Peel and slice 3 large garlic cloves, fry until golden brown, remove the garlic and set aside. Step 5: Put the duck in a deep fryer or fry it without oil if you are afraid of oil. But this dish will be more delicious and authentic if it is deep fried.
