Sticky rice is a very familiar dish for Vietnamese people in daily life and also on holidays. To prepare sticky rice deliciously and attractively, we also need some secrets.

Choose good sticky rice

Sticky rice is the soul of your sticky rice dish, so choosing the right rice is extremely important. Sticky rice varieties such as Tu Le, Golden Flower Sticky Rice or Goose Egg Sticky Rice are all delicious types of sticky rice that many people often choose to cook sticky rice.

 

When buying, you should choose sticky rice with even grains, opaque white color, shiny, not broken. Absolutely do not choose rice that is too white because that is rice that has been milled too much, losing the bran layer containing many nutrients.

Depending on the type of sticky rice, the soaking time will be different, however, you should soak it for 6 - 8 hours, which is enough and will help the sticky rice to be more fragrant when cooked.

You should not soak sticky rice for too long because then the rice will turn sour and when cooked it will be mushy, making the sticky rice dish no longer delicious to enjoy.

In addition, when soaking sticky rice, you should add a little salt to help remove odors and create a rich flavor when the sticky rice is cooked.

Normally, when cooking sticky rice, we often encounter basic errors such as: the middle layer is soggy, the top layer is dry and the bottom is burnt. This usually happens because you do not keep the heat even and do not create ventilation for the sticky rice grains when cooking sticky rice.

To overcome this situation, you should use your hands to scoop handfuls of rice into the pot instead of pouring the whole bowl of rice in as usual. This will help the rice grains to be spread evenly, not pressed together, and air will circulate throughout the pot and help the sticky rice to cook evenly.

You can also use a damp towel to cover the outside of the pot lid. The damp towel will help seal the pot and prevent steam from escaping, causing the sticky rice to dry out and cook unevenly.

You can also put the sticky rice in the middle of the pot and leave it open around the edges or spread the sticky rice evenly over the surface of the pot and use chopsticks to poke 3-4 large holes to allow air to circulate more easily.

The amount of water poured under the steamer should only take up about 1/3 of the pot's capacity. This method helps to have just enough water to soften the sticky rice but not too mushy or too mushy, making the sticky rice lose its aesthetic appeal.

To have delicious and fragrant sticky rice, every 10 minutes you should open the pot lid and use a clean towel to wipe off the water on the lid and use chopsticks to stir evenly so that the sticky rice is cooked.

After the sticky rice is cooked, you should drizzle a little cooking oil or chicken fat on the surface of the sticky rice to help the sticky rice become shiny and smooth, and stir the sticky rice well before taking it out.
