More than ten years ago, Ms. Le Thi Sam (67 years old) often carried her goods to Hang Be market to sell fish noodles under the banyan tree. In recent years, she has taken advantage of the small yard in front of her house to have her children help her sell.
Although located in a small alley, Mrs. Sam's restaurant still attracts many customers who are curious about the unique fish rolls or fish spring rolls. Mrs. Sam said: "In the past, my family often made this dish for meals and holidays. After that, everyone praised it, so I put it on sale so that more customers can enjoy it."

She learned how to make fish rolls with meat according to a Hue recipe. The ingredients of this dish include sliced snakehead fish, meat, wood ear mushrooms, and shiitake mushrooms. The snakehead fish is sliced thinly, about 10cm wide, just enough to wrap around the filling inside.
Then she mixed the meat, wood ear, and shiitake mushrooms, seasoned them to taste, coated them in flour, and fried them. Wait until the oil in the pan is hot, then put the fish rolls in to fry. Mrs. Sam said that the temperature needs to be adjusted appropriately throughout the frying time, so that the outer shell has the right crispiness.

The fish roll dish will be served with a special dipping sauce. This dipping sauce is mixed mainly from vinegar, fish sauce, and sugar in the right proportions so as not to overpower the flavor of the dish.
When customers order fish rolls, the restaurant will fry them to ensure crispiness and quality. Each fish roll will be cut in half for customers to easily enjoy.
In addition to fish rolls, the restaurant's main dish is still fish noodle soup, which is so famous that many diners from near and far who come to the old town still tell each other to visit this restaurant with a very strange name: Sam Cay Si.

The soul of the noodle bowl is the bone broth and many other ingredients such as tomatoes, pineapples, and spices. Mrs. Sam said that the sour taste is made from many ingredients so that the broth has a clear and moderate sour taste, unique to the palate.
The restaurant serves seasonal vegetables, but mainly mustard greens, celery, and bean sprouts. In addition, the restaurant also has mixed fish noodles and fish rice noodles to serve customers. A portion costs about 45,000 VND, and fish rolls with meat are 13,000 VND each.

1 year old, Hoan Kiem) said this is the fish noodle shop that suits his taste the best in Hanoi. "The bowl of noodles is very full of fish, the broth is sweet and fragrant" - Mr. Vu said.
Nguyen Quynh Anh (22 years old, Hai Ba Trung) especially enjoys the restaurant's fish rolls: "I find this dish strange, the crust is crispy, the meat inside is soft, they go very well together."
Most diners appreciate the restaurant's fast service, friendly attitude, and generous servings of fish noodles. However, the downside is limited parking space, and during peak hours, diners may have to park outside and pay an extra fee. This can affect the diners' experience.
