Tinh Khe water coconut forest, in Tinh Khe commune ( Quang Ngai city, Quang Ngai province) is considered a miniature "Western region". Along both sides of Kinh river, in addition to the immense coconut forest, there are also many types of wild plants, including rau rang.


As someone who loves stir-fried vegetables, when I heard about stir-fried garlic spinach, I was very interested and a bit curious, because it was the first time I heard the name of the spinach dish.

At first, I didn’t know what kind of plant it was, but why did it keep growing and pushing up to catch the sunlight? I reached out and picked a shoot of wild fern next to a small tree and heard my friends in the My Khe Agricultural and Community Tourism Cooperative introduce it as wild fern.

Rau vang grows abundantly in brackish water along the Kinh River, where the tides rise and fall in a daily cycle, making it very suitable for Rau vang to grow green all year round.

During the resistance war against the US, when soldiers, guerrillas and people of Tinh Khe took refuge in the water coconut forest, they also relied on the rau rang plant to survive the enemy's sweeps, because rau rang was not only eaten to relieve hunger but also used to chew and apply to wounds to stop bleeding, disinfect and treat mosquito bites.

After the visit to the water coconut forest, we were surprised when lunch at Mr. Pham Van Phuong's house in Truong Dinh village, Tinh Khe commune had all the rustic dishes of Tinh Khe people such as: tamarind fried crab, shrimp spring rolls, shrimp pancakes, catfish cooked with sour star fruit soup and the most unique dish was stir-fried cogongrass with garlic.

Rau rang is a rustic vegetable dish that is often found on the family dinner table of Tinh Khe people. Because Rau rang is so familiar in daily life, Tinh Khe people talk to each other in a very interesting and concise way, like: "What are we eating today?", the response is "rice - rang only", meaning it doesn't matter what you eat, just white rice and Rau rang is enough for a meal.
