Ingredient:

- Taro flour

- Egg

- Radishes, carrots, green onions

- Cooking oil, soy sauce, salt, sugar, vinegar

Making:

- Wash the radishes and carrots, shred them, and soak them in sugar, salt, and vinegar. After 15 minutes, squeeze out the excess water to make a sour side dish that is not cloying.

- Wash and finely chop the scallions.

- Cut the dough into bite-sized pieces. Add soy sauce to the bowl of dough and rub each piece evenly to absorb the soy sauce. Doing this will give the fried tofu a beautiful golden color and a richer flavor. Heat a pan on the stove, and when the oil is hot, add the tofu pieces one by one, frying them until golden brown on all sides, then remove them to a plate.

- Drain off excess oil from the pan and add the batter, then add the beaten eggs (it will taste better if you don't beat them). Fry for about 2 minutes until the eggs are cooked through. Sprinkle some finely chopped green onions on top to finish.

- Prepare the dipping sauce: Mix soy sauce, sugar, vinegar, and warm water until dissolved. Add one chili pepper to the sauce for extra flavor.

Place the batter on a plate, add some pickled radish and carrots, then pour in a tablespoon of soy sauce to create a delicious and appealing plate of fried batter.

The batter is golden brown and crispy on the outside, soft and chewy on the inside, with fragrant and rich egg and scallions, and dipping it in sweet and sour soy sauce is simply irresistible.
