Deciding to give up his job as a chef at several 5-star hotels in Hanoi with a stable income of 20-30 million VND per month, Mr. Nguyen Viet Quan (from Van Lam district, Hung Yen) started a career in culinary training. With a new and eye-catching Japanese kitchen model, Quan's facility quickly attracted many students, bringing in an income of up to hundreds of millions of VND per month.

“My family has a tradition of working in the culinary industry, so I have been passionate about it since I was a child. While working in a 5-star hotel, an American chef shared with me the idea of ​​opening my own restaurant to welcome friends and share about cuisine every day. With that idea in mind and my passion, I decided to stop my stable job to find a new direction, freely develop my strengths,” Mr. Quan said about his sudden decision to leave the profession that many people dream of.

After quitting his job, Mr. Quan gathered all his capital and opened the first Japanese sushi restaurant in Ecopark urban area, Hung Yen , and began to realize his passion for cuisine. After a while, this model helped Quan earn money, and at its best, he had up to 4 establishments.

But then the COVID-19 pandemic hit, his business faced difficulties, and all four establishments had to be transferred to other people. Having just given up a stable job to start a business, experiencing the feeling of success for a short time, Mr. Quan was left with almost nothing after the biggest incident in his 15 years of working. Many times, Mr. Quan even doubted whether his decision was wrong.

Fortunately, he quickly became involved in the culinary teaching profession, and this was the "spiritual medicine" that helped him overcome the difficult period. "Although I encountered the biggest incident that left me penniless, my passion for cuisine remained intact. With my existing experience, I decided to reopen a restaurant and accepted to work with some schools to teach culinary arts. In addition, I started teaching at my restaurant," said Mr. Quan.

Thanks to his reputation, Mr. Quan has many students coming to him, so he has to continuously open more classes. Currently, Mr. Quan has about 10 students studying each month with the lowest price being 28 million VND for a group course of 6 people and the highest price being 98 million VND for a one-on-one course.

“The above cost includes the cost of buying ingredients for you to practice your cooking skills. After each course, I will contact famous restaurants so that you can do an internship. Many students after their internship have been accepted by large restaurants. Currently, there is a shortage of high-quality human resources for restaurants, so the demand for highly skilled chefs has also increased sharply,” Mr. Quan shared.

However, according to Mr. Quan, cooking already requires a lot of meticulousness and care, but cooking Japanese dishes requires even more meticulousness and care. Because Japanese dishes often require attention to the quality of fresh food, as well as eye-catching and sophisticated appearance. If just one step is not done properly, the whole dish is at risk of being thrown away and cannot be used.

Emphasizing the preparation of ingredients, Mr. Quan said: " The Japanese are famous for their meticulousness and meticulousness. Therefore, the dishes also require many different techniques. I had to directly select 4-5 units to find a source of fresh imported food that met the requirements. The dishes must also be prepared by hand, meticulously from the step of brushing the sauce to the proportions of the sushi pieces. Before starting to work, all chefs must clean their hands and feet according to strict requirements."

According to the 9X guy, society is increasingly progressive, people's needs are increasingly improved, so nowadays, food preparation is no longer just cooking but also having to be beautiful and creative in both form and flavor to create a new feeling. Therefore, Mr. Quan believes that in the future, the cooking teaching model will develop widely, helping young people have the opportunity to start a successful business.
