If you want to enjoy delicious fried elephant ear fish with your family at home, you can refer to the following recipe.
Ingredient
1 elephant ear fish (depending on the number of people, choose a medium or large fish), fish sauce, rice paper, fresh vermicelli, common spices such as sugar, fish sauce, seasoning powder, roasted peanuts... In addition, you prepare lemon, garlic, fresh chili, onion, ginger, cucumber, pineapple, star fruit, herbs...
When choosing fish, you should choose live fish with shiny gray scales and no peeling. The bigger the elephant ear fish, the firmer the meat.

Making
Soak the fish in diluted salt water for about 10 minutes, then clean the intestines, keeping the scales and tail intact. Remove the fishy smell and slime from the fish by rubbing ginger with coarse salt and rinsing. Let the fish drain completely before frying.
Wash and drain herbs. Peel and mince garlic, onion, and ginger. Remove seeds and slice chili.
Put the ready-made fish sauce in a bowl, mix it with a little minced garlic, a little seasoning powder, lemon juice, a few slices of chili, and a little sugar (depending on your taste). If you don't like fish sauce, you should prepare a bowl of fish sauce with garlic and chili to dip the fish in.
Frying fish: Use a large pan, fill with oil, sprinkle a little salt to limit oil splashing while frying. After cleaning the fish, drain and slowly release the fish, following the edge of the pan. Use a ladle to pour hot oil over the entire fish body until the scales are puffy.
Reduce heat and fry until one side of the fish is golden brown and crispy, then flip the other side until the fish is cooked through.
Remove the fish, drain the oil (or line with oil-absorbing paper), place on a plate, sprinkle some roasted peanuts on the fish, arrange with fresh vermicelli, raw vegetables, rice paper rolls, cucumber, and thinly sliced star fruit.
You can also use an air fryer to fry fish instead of cooking oil to make the dish less greasy. However, it should be noted that frying elephant ear fish this way may not be as crispy and beautiful as when using cooking oil.
