“I have never served a group with such a large number of people and luggage,” the Singaporean driver jokingly commented to Tuoi Tre reporter, while helping the group move large boxes of luggage to different locations.

It is estimated that this year's Vietnam Pho Festival "army" will number more than 100 people, with staff from pho brands, chefs and kitchen staff from Saigontourist Group, and media and event staff from Tuoi Tre .

In the morning, a corner of Geylang was bustling with a group of more than 30 people from pho brands "landing" in the kitchen of Hoi An Chicken Rice Restaurant on Jalan Ayer Street.

Excitedly arriving to take over the kitchen, the brands Pho Thin, Pho Khoe from Korea, Pho Phu Gia, Pho Vuong, Pho Hai Thien, Pho Phat Tai, Pho Ta (Binh Tay Food), Pho Saigon, Pho Sen Sasco... quickly got to work, in the spirit of sharing and supporting each other.

“Everything is professionally arranged and shared,” commented Khuat Quang Thanh, chef of Pho Sen SASCO. This is also the first time Thanh has participated in the Vietnam Pho Festival.

The group of pho brands shared ingredients and grouped together to tackle many tasks to keep up with schedule.

“There are four restaurants in a group, then divided into small teams to blanch bones, blanch meat, prepare vegetables…”, Mr. Thanh said, adding that the staff takes turns washing vegetables and cutting chili peppers, to make the most use of space and tools.

Ms. Nguyen Thi Hong Gam, Deputy Director of Sales and Marketing of Saigontourist Group, rolls up her sleeves to help in the kitchen.

Thien Long Restaurant on Jln Besar is another shared kitchen. The chefs and staff from the 5-star restaurant kitchens of the Saigontourist Group are working “always” here.

This year, Saigontourist Group sent to Vietnam Pho Festival 2025 a team of main chefs from four luxury hotels: Rex Saigon, Majestic Saigon, Grand Saigon, Caravelle Saigon and the Pho brand of Thu Duc Golf Restaurant (Vietnam Golf & Country Club).

According to observation, the common kitchen at Thien Long restaurant was on fire, the smell of broth and spices filled the kitchen.

In addition to traditional pho, the chefs at the Majestics Saigon Hotel are expected to serve Singaporean diners with beef rib pho and stir-fried pho. With more unusual variations, the Thu Duc Golf Course restaurant will contribute chicken pho, crispy pho, and seafood pho.

Saigontourist Group's kitchen units also promote Vietnam's unique cuisine with spring rolls, vermicelli with spring rolls, chicken rice, or Hue beef noodle soup Rex...

Before entering the kitchen, you must take a test.

In addition to food import regulations, Singapore also has very strict requirements for food safety certification.

Accordingly, each participant from the preparation stage to the kitchen must take the exam and receive the WSQ Food Safety Course Level 1 certificate. While the VNPFs in Korea and Japan do not have this requirement.

However, Mr. Pham Tien Cuong, head chef of Thu Duc Golf Restaurant (Vietnam Golf & Country Club), said that this does not pose a problem for Vietnamese chefs, because all requirements and regulations of Singapore are similar to the regulations on food hygiene and safety in Vietnam.

“These are standards that professional chefs are used to practicing and following, so there is nothing too difficult,” said Mr. Cuong.

Vietnam Pho Festival 2025 in Singapore connects cultures, promotes cooperation

Vietnam Pho Festival 2025 in Singapore, organized by the Vietnamese Embassy in Singapore, Tuoi Tre Newspaper and Saigon Tourist Group in collaboration with the Department of Industry and Trade of Ho Chi Minh City, the Vietnamese Liaison Committee in Singapore under the direction of the Ministry of Foreign Affairs and the People's Committee of Ho Chi Minh City, will take place on October 18 and 19 at Our Tampines Hub, Singapore.

The festival was held in the context of Vietnam and Singapore upgrading their relationship to a comprehensive strategic partnership, affirming the program's significance and stature.

With the message "Pho - Enjoying together, growing together", Vietnam Pho Festival 2025 hopes that the event will not only invite international friends to enjoy a typical Vietnamese dish, which was listed by CNN in the list of 50 must-try dishes worldwide in 2011, but also convey the desire to connect - share - accompany the development of Vietnam.

Through the festival, pho will be introduced as a "cultural ambassador", serving as a bridge for Vietnam and Singapore, as well as international friends, to work together towards a prosperous and sustainable future.

The most important activity of the festival is to bring Singaporeans and tourists the opportunity to enjoy the "authentic" taste of Vietnamese pho. At Our Tampines Hub, attendees will be able to enjoy pho prepared directly by top artisans and chefs from Vietnam.

In particular, along with the pho festival, a large-scale investment forum was also held, namely the Vietnam - Singapore Investment, Trade and Tourism Promotion Forum 2025, affirming the substance of the event. The forum took place right after the opening ceremony (morning of October 18).

At the forum, management agencies and businesses will discuss new cooperation trends in green processing and logistics, tourism and aviation services, import and export of Vietnamese agricultural products and specialties, digital transformation and e-commerce.
