Ingredient
• 275g boneless American chicken thigh meat
• Minced lemongrass, garlic, and shallots
• Fish sauce, oyster sauce, honey, ground pepper, chicken powder, annatto color, cooking oil
Cabbage, carrots, cucumber sliced
• Herbs: perilla, Vietnamese coriander, cilantro
• Roasted peanuts, fried onions
• Sweet and sour fish sauce mixed with fish sauce, lime juice, sugar, garlic, chili and warm water (stir until sugar dissolves)
Making
1. Marinate chicken with spice mixture (lemongrass, garlic, shallots, fish sauce, oyster sauce, honey, pepper, chicken powder, annatto color, cooking oil) for at least 30 minutes to let the meat absorb the spices.
2. Grill the chicken until golden brown on both sides using an air fryer or charcoal grill, then slice thinly.
3. Mix vegetables with sweet and sour fish sauce.
4. Arrange the chicken on top of the mixed vegetables, sprinkle with roasted peanuts and fried onions to complete the salad.
