The 32nd Asia- Pacific Economic Cooperation (APEC) Summit Week took place from October 30 to November 1 in Gyeongju city, North Gyeongsang province, South Korea.
On the evening of October 29, President Lee Jae-myung hosted a special dinner for economic leaders attending the APEC Economic Leadership Week.

According to the South Korean presidential office, the special banquet was served in a multi-course format using premium Korean ingredients. The menu featured many attractive dishes, including steamed buns filled with truffles and “ogol” chicken (also known as Korean black chicken) from Yeongwol, Gangwon Province.

One of the ingredients in the above dish is truffle - also known as the "black diamond" of the culinary world thanks to its rarity, special aroma and flavor.
The truffles are even more expensive because they only grow wild in the wild and require hunting dogs or sniffing pigs to find them. Many people compare the search for truffles to a “treasure hunt”.
Not only famous for being expensive and rare, truffles are also "hunted" because they are a nutritious food, bringing many health benefits.
Mushrooms are rich in nutrients.

Truffles are rich in carbohydrates, protein and fiber, along with both saturated and unsaturated fatty acids. They are also a good source of important vitamins and minerals such as vitamin C, phosphorus, calcium, magnesium, manganese and iron.
Additionally, this mushroom is rich in antioxidants such as vitamin C, lycopene, gallic acid, and homogentisic acid - compounds that help neutralize free radicals and protect cells from oxidative damage.
Support cancer prevention
Truffles are ranked among the top foods that help prevent cancer, especially malignant tumors. Selenium in mushrooms slows tumor growth, reduces inflammation, thereby neutralizing cancer-causing agents.

Some studies show that truffle mushrooms contain powerful anti-cancer substances. Substances extracted from this mushroom have the effect of preventing the growth of bad cells in the lungs, intestines, liver and breasts.
Boost immunity
Truffles are rich in natural antibiotics like penicillin, which prevent bacterial growth.
The beta glucan and selenium content in truffles helps stimulate the natural immune system. In addition, this mushroom contains natural antibacterial compounds that help inhibit some disease-causing bacteria.
In addition, truffles are also researched and used as a supportive ingredient in the treatment of many common diseases such as diabetes, dyslipidemia, coronary heart disease and high blood pressure.
