Making:
Wash the pork ribs and cut them into small pieces. Then, marinate the ribs with minced garlic, fish sauce, and minced shallots. Marinate the ribs for about 30 minutes to absorb the spices. Heat a large pot, then add cooking oil and heat the oil. Add the marinated pork ribs to the pot and fry until the ribs turn brown and firm. Make sure to stir constantly so the ribs don't burn or stick to the bottom of the pot.
Once the ribs have turned brown, add sugar to the pot, stirring until the sugar dissolves and forms a caramel base. This is an important step to bring out the characteristic flavor of braised ribs with pineapple.
Next, add the pineapple slices to the pot, stir well with the ribs and caramel base for about 5 minutes. Then, add the fish sauce and chopped red pepper to the pot, stir well.
Cover the pot and simmer for about 15-20 minutes or until the ribs are tender and the pineapple is flavorful. Add the spring onions and stir well, cook for a few more minutes and enjoy.
