Making:
Wash the pork ribs and cut them into small pieces. Then, marinate the ribs with minced garlic, fish sauce, and chopped shallots. Let the ribs marinate for about 30 minutes to absorb the flavors. Heat a large pan, then add cooking oil and heat the oil. Add the marinated pork ribs to the pan and fry until the ribs turn brown and are crispy. Make sure to stir constantly to prevent the ribs from burning or sticking to the bottom of the pan.
Once the ribs have turned brown, add sugar to the pot, stirring until the sugar dissolves and forms a caramel base. This is a crucial step in bringing out the distinctive flavor of pineapple-braised ribs.
Next, add the diced pineapple to the pot, stirring well with the ribs and caramel base for about 5 minutes. Then, add the fish sauce and chopped red chili peppers to the pot and stir well.
Cover the pot and simmer over low heat for 15-20 minutes, or until the ribs are tender and the pineapple has absorbed the flavor. Add the scallion leaves and stir, cook for a few more minutes, and enjoy.
