In recent days, information about the dish "xe pipe" has received public attention.

The dish has become a favorite specialty of drinkers, although the price is not cheap. Referring to some restaurants in Hanoi , the intestines of the pipe are sold for more than 2 million VND/kg.

According to many people, the intestine is actually the first part of the small intestine, located right after the stomach. This part is short, has thick walls, and contains a layer of white powder inside, round and big like a pipe inserted into a water pipe.

Ms. Nguyen Thi Chung, who has 16 years of experience in the pork slaughter and meat business in Vinh Phuc , said this type of intestine is very rare.

In more than ten years of working, Ms. Chung has collected only a handful of pipe segments.

Therefore, what surprises consumers the most is that some restaurants in big cities still provide large quantities of pork belly to customers every day. Many places even claim that "buy as much as you want, we will have it".

Although it is popular, considered a specialty, and sold at a high price in Vietnam, in many Asian countries, there is no concept of a pipe tube.

When Dan Tri reporters conducted a quick survey on China's online shopping platform Taobao, they simply typed in the keyword "pig organs" and the results returned very quickly.

Depending on the type of organ, customers can choose to order online with prices starting from 64 yuan (230,000 VND) for a weight of about 2.5 kg. If choosing the pig's intestines, customers have 3 options including large intestine, small intestine and the first part of the intestine (also called fei chang, which is also the fattest part).

In a country of billions of people, there is no concept of a car seat.

When the reporter shared the image and asked a Chinese guest about this specialty, he confirmed that he had never seen this dish, even though he was a fan of pig intestines.

Mr. Truong Dai Soai said that in his hometown of Guangdong, people love to eat offal. In the traditional markets or supermarkets, they sell a lot of pig offal such as heart, liver, small intestine, large intestine.

However, most young people do not have the habit of buying pig organs to process at home, but will go to long-standing stores to enjoy them for convenience. The prices of these organs are also quite affordable.

When hearing about the price of Vietnamese pork intestines in Vietnam reaching 2-4 million VND/kg, the Chinese customer was surprised.

"Restaurants from low-end to high-end serving offal appear all over Guangdong, but the way of preparing it is completely different from the Vietnamese.

"Chinese people mainly eat offal stir-fried with fresh chili, garlic, ginger, dried chili, pepper or as an ingredient for dipping in a spicy hot pot. We do not eat it steamed or boiled. I have enjoyed pork offal a lot, but this is the first time I have seen offal in a cigarette and it is very strange, the price is also more expensive than in China," Soai affirmed.

According to statistics from Oceanus Group (a Beijing-based food supply chain management corporation), China is one of the largest consumers of offal in the world , with pork offal accounting for the highest proportion.

This stems from the tradition of eating food from "nose to tail" which refers to the creativity of Chinese chefs who can process every part of the animal into delicious, nutritious dishes.

In 2022, China imported $272 million worth of edible offal, making it the world’s largest importer of offal. Most of the offal came from the United States, Spain, Denmark, the Netherlands, and France.

In particular, experts in this country divide the common ways of processing offal in the billion-people country as follows: Chicken neck and wings are used for BBQ, chicken heart and liver are processed for charcoal grilling, pig intestines (small intestine, large intestine, first part of intestine) are used for hot pot or spicy stir-fry, pig blood is used to make soup.
