How to choose fresh duck meat

If you're buying pre-prepared duck, choose those with light yellow, smooth, and non-greasy skin, free from blemishes or bruises. Avoid ducks that have been injected with water; check if the meat is mushy and if the thighs and breasts aren't firm.
How to make braised duck with ginger
Preparing the duck meat
Using coarse salt, white wine, and finely chopped ginger, rub the duck meat for 2 minutes to clean and remove any unpleasant odor. Drain the water and chop the duck meat into bite-sized pieces.

Remove all the feathers from the duck and discard any excess meat from the neck. Wash the ginger and cut it into strips. Chop the chili peppers. Peel the onion and garlic and mince them.
Marinate the duck meat.
Marinate the duck meat with 1 teaspoon of sugar, seasoning powder, 1/2 teaspoon of MSG, chopped shallots and garlic, and all of the shredded ginger. Mix well and let the duck rest for about 5 minutes so that the meat absorbs the spices evenly.

Heat two tablespoons of sugar in a pan until it turns light brown, then add half of the remaining chopped shallots and garlic.
