Nam Pho village, located in Phu Thuong commune, Phu Vang district, is nearly 6 km from Hue city. The village has been famous for its cuisine since the 16th century, and is associated with the specialty "Nam Pho rice noodle soup". Besides rice noodle soup, it is also known for many other traditional Hue dishes.

Nam Pho rice noodle soup has been famous for centuries both domestically and internationally. The soup features a thick broth and soft, chewy noodles made from rice flour and tapioca starch. The noodles are thick, about three fingers long, non-sticky, and float to the surface when cooked. The shrimp and meat mixture is also hand-shaped into balls and added to the boiling broth. Both the shrimp and meat are fresh and prepared daily. The rice noodle soup is best eaten hot.
Mini sausage rolls
Nam Pho pork sausage is made from fresh pork, with all the fat removed, then ground. The first grinding is done by freezing the meat while tapioca starch and baking powder are mixed in. Once the meat is firm, it's ground again, adding more tapioca starch and baking powder. Adding cooking oil during grinding gives the sausage a smooth and appealing appearance. The sausage is wrapped in banana leaves, paired together, and steamed. It can be eaten with salt and pepper. This dish is sold on the Thong Nhat trains.

Bánh nậm, also known as bánh nặm, is a delicious dish with a soft, smooth texture. It's made with refined rice flour and a filling of shrimp and meat. The rice flour is cooked in a pot until slightly thickened, then the shrimp and meat are finely chopped, seasoned, and stir-fried until cooked. A small amount of the batter is spread thinly and evenly on a banana leaf, the shrimp filling is spread on top, and the cake is wrapped into a rectangular shape. It's then steamed for 15 to 20 minutes until cooked. The cake is served with fish sauce.
Shrimp patties
Shrimp patties are chewy and crunchy, made from pork and shrimp, seasoned with spices, onions, pepper, and fish sauce. To give them a golden color, the patties are brushed with egg yolk before steaming. After steaming, they are cut into small pieces. Shrimp patties, combined with banh nam (a type of steamed rice cake), create a meal with a rich traditional flavor.

The dish consists of a pair, a combination of banh ram and banh it, with two parts: a golden yellow and a white layer. The white part is a sticky rice flour layer wrapping stir-fried shrimp, with a crispy fried rice flour layer underneath. The cake is further decorated with green scallions and red dried shrimp. It's served with a sweet and savory dipping sauce, offering a unique blend of crispy and chewy textures. Diners will experience the distinctive combination of these two flavors.
