Dumplings are a familiar breakfast dish for many people, however, not everyone knows how to make dumplings. Let's refer to how to make this type of cake below.
Ingredients for making dumplings
Crust: 300g flour, 50g sugar, 5g yeast, 150ml unsweetened fresh milk or warm water, 10ml cooking oil, 1/4 teaspoon salt.
For the filling, we make minced pork and quail egg filling: 200g minced pork, 10 boiled quail eggs, 20g wood ear mushrooms soaked in water, chopped; shallots, green onions, salt, sugar, pepper, seasoning powder.

How to make dumplings
Step 1: Make the dough
Mix the dough: In a large bowl, add flour, yeast, sugar and salt and mix. Continue adding fresh milk to the dough mixture, using your hands or a mixer to knead the dough until it is soft, smooth and not sticky. Add a little cooking oil and knead for another 5 minutes.
Proofing: Cover the bowl of dough with plastic wrap or a damp towel. Proof the dough in a warm place for about 1-2 hours until it doubles in size.
Step 2: Make the filling
Add cooking oil and saute shallots until fragrant, add minced meat and stir-fry until cooked. Add wood ear mushrooms, green onions and season with salt, pepper and sugar to taste.
Let the filling cool, divide into small balls, each ball with 1-2 quail eggs.

Step 3: Mold the cake
After the dough has risen, knead it lightly and divide it into equal portions (about 40-50g each). Roll the dough into a flat, round piece. Place the fried filling in the middle, wrap it tightly and shape it into a bun.
Step 4: Steam the cake
Prepare a steamer, lining the bottom of each cake with parchment paper to prevent sticking. Bring water to a boil, then steam the cake over medium heat for about 20 minutes. When the cake is done, the crust will be soft and have a beautiful white color.

Tips for making dumplings
To make the dumplings white and beautiful, add a few drops of vinegar to the steaming water. You can vary the filling to vegetarian or non-vegetarian according to your preference.
If you don't have yeast, you can substitute baking powder but the cake will be less fluffy.
