Leading expert shares the art and heritage of French cheesemaking

To increase the love and understanding of French cheese in Vietnam, the French Dairy and Cheese Association (CNIEL), with support from the European Union (EU), has just launched the Spice Eat up! Europe Full of Character Savor Cheeses from France campaign in 2024.

The campaign aims to equip professionals and consumers in Vietnam with valuable knowledge about French cheese through engaging activities, such as B2B networking events, sampling booths at points of sale, masterclasses for students, and many other activities.

A highlight of the campaign was the Trade Seminar held in Ho Chi Minh City on September 24. Led by French cheese expert François Robin, the unique event aimed to share the art and heritage of French cheese making, with a special theme of unique combinations of cheeses and spices typical of the region.

Europe, the cradle of rich cultures and culinary arts, has long been famous for its many foods and special dishes. Among them, France stands out with its sophisticated cuisine , especially its centuries-old cheese-making heritage.

With more than 1,200 varieties, each French cheese product carries its own regional story, unique flavor and meticulous craftsmanship, all inherited from long-standing traditional techniques.

According to French cheese expert François Robin, the core of the prestigious quality of French cheese comes from the unwavering dedication to perfection in every stage of production, expressed through five factors:

Sustainability : The French dairy industry actively participates in environmental protection through initiatives such as France Terre de Lait , which focuses on water conservation and reducing carbon emissions.

Heritage & Expertise : Craftsmen use traditional methods, passed down through generations, to create cheeses of exceptional quality and character. This respect for tradition is particularly evident during the aging process, a crucial stage in the development of flavour.

This process, which can take anywhere from weeks to months or even years, requires a deep understanding of the cheesemaker to guide each cheese to perfection.

Safety : The dairy industry has always been strongly committed to hygiene and food safety, from the farm to the transportation and sale, ensuring optimal product quality. 100% of milk produced in France undergoes strict food safety testing.

Animal welfare : Animal welfare is always a top priority. Over 97% of farmers comply with the Charter of Good Agricultural Practices, which sets high standards for animal welfare.

Natural diversity : France's rich soil, diverse landscapes, climates and native varieties contribute to the richness and uniqueness of its cheeses.

At the event, expert François Robin shared the 5 most famous French cheeses: Brie, Emmental, Mimolette, Bleu d'Auvergne.

The history of French cheese dates back to the 7th century. Today, French cheese is a favorite choice for every meal and special occasion.
