Prepare:
- 500g ground beef.
- 3-4 sweet potatoes.
- 1 can of black beans, drained.
- 1.5 teaspoons chili powder.
- 1 teaspoon dill.
- ½ teaspoon oregano leaves.
- ¼ teaspoon red pepper.
- Pepper.
- ¾ cup grated cheddar cheese.
- Green onion, onion, minced garlic.
Making:
Step 1: Preheat oven to 200 degrees Celsius.
Step 2: Wash the sweet potatoes and place them on a baking tray. Brush with 1 tablespoon of olive oil and a little salt to taste.
Step 3: Bake the potatoes for 50 minutes or until a knife can easily pierce the potato.
Step 4: Heat cooking oil in a large skillet over medium heat.
Step 5: Add onions and stir-fry for about 5 minutes until soft.
Step 6: Add garlic and cook for another 1 minute, stirring constantly.
Step 7: Add ground beef, increase heat to medium-high and cook until done.
Step 8: Add black beans, all spices and a little salt and pepper to taste. Cook for another 3-4 minutes.
Step 9: Make a slit along the sweet potato, use a spoon to scoop out some of the potato to create space to stuff the beef.
Step 10: Pour the beef mixture over the potatoes and top with grated cheddar cheese.
Step 11: Bake for another 5 minutes until the cheese melts, then sprinkle with green onions to decorate and enjoy.
