“Steamed goat with lemon is a traditional dish and a specialty of Ninh Binh,” the website writes. “The dish is made from goat meat boiled with lemon juice. Other common ingredients include chili, lemon leaves, garlic, pepper, and sesame.
The meat must be thinly sliced and fresh to retain its sweetness. Raw goat with lemon is often served with figs, green bananas soaked in vinegar and soy sauce for dipping.
It is known that the food and drink rankings are based on opinions and reviews from a large number of tourists, experts, and food critics.
Ninh Binh mountain goats are raised naturally, their meat is delicious, firm, and low in fat. In addition to raw goat with lemon, goat meat is also processed into many other dishes such as steamed goat, pan-fried goat, stir-fried goat with lemongrass and chili, goat stewed with Chinese herbs, goat spring rolls, etc.
In 2012, along with burnt rice, Ninh Binh mountain goat dish was included in the "Top 50 Vietnamese specialties" established by the Vietnam Record Center.
