According to a VNA reporter in Germany, at the announcement and award ceremony on the evening of June 17 in Frankfurt, the Michelin Guide honored 341 restaurants in Germany - a record number ever.
This is also the second consecutive year that Germany has set a record for the number of Michelin-starred restaurants.
In response to this impressive result, the international director of the Michelin Guide, Gwendal Poullennec, affirmed that Germany is a " gastronomic powerhouse."
He rates German cuisine as one of the "global pioneers in exploring new things and making the culinary experience more enjoyable and sustainable."
Germany now has a total of 12 three-star restaurants - the highest category in the Michelin rating system, including two restaurants that have been awarded this title for the first time. One of them is the Haerlin restaurant in Hamburg.
Commenting on the craftsmanship of chef Christoph Rüffer and the Haerlin restaurant, Michelin inspectors affirmed: "With the perfect combination of top-quality ingredients in a wonderfully balanced whole, 3 stars are fully deserved."
In Munich, the restaurant Tohru in der Schreiberei was also awarded 3 stars for the first time.
According to Michelin inspectors, "with his distinctive style and refined approach, chef Tohru Nakamura has succeeded in creating an extremely interesting combination of Japanese cuisine and classic French cuisine."
Previously, the restaurant Tohru in der Schreiberei was also awarded 2 Michelin stars last year.
In addition to the 3-star restaurants, Michelin Guide also awarded 2 stars to 47 restaurants and 1 star to 282 other restaurants, including 30 restaurants receiving stars for the first time.
However, 33 restaurants in Germany have had their stars removed due to closure, change of operating model or decline in quality.
In addition, Michelin Guide continues to award Green Stars to restaurants that place particular emphasis on sustainable, environmentally friendly and resource-saving cuisine.
This year, Germany has 80 restaurants honored with the Green Star, including 14 restaurants awarded for the first time, an increase of 3 restaurants compared to last year.
The trend of vegetarian cuisine continues this year, while regional and seasonal factors still play a huge role in ingredient selection.
Director Poullennec said 80 Green Stars was a very impressive number.
Despite its many achievements, veteran chef Christian Bau – who runs a three-Michelin-starred restaurant in the town of Perl – says that Germany's fine dining scene still faces many challenges.
“Unfortunately, we can no longer fill all our restaurants as we used to,” he said. “The number of quality restaurants is increasing, but the number of diners is not changing. This is a worrying trend.”
In Germany, there are more than 20 Michelin inspectors who operate anonymously, that is, they dine like regular customers to ensure fair and objective evaluations.
The awarding of the coveted Michelin stars is based on a globally consistent evaluation system, based on key criteria: quality of ingredients, mastery of cooking techniques and flavour combinations, the chef's personal touch, the value of the dish and consistent quality over time.
The first Michelin stars were awarded to German restaurants in 1966. In addition to the Michelin Guide, the international culinary guide Gault&Millau also periodically publishes and awards “chef hats” to individuals who have made outstanding contributions to the culinary arts./.
