Many of them have returned to their roots, combining modern cooking techniques to tell the stories of their homelands and rediscover the flavors of their childhood. At the same time, street food stalls, family-run eateries, and long-standing establishments still focus on preserving culinary traditions with authenticity and passion,” said Gwendal Poullennec, International Director of MICHELIN Guides.

Mr. Gwendal Poullennec also said, "For our team of appraisers, the journey to discover new dining establishments in Vietnam remains as exciting as the first days. They are constantly inspired by the passion, creativity and desire for perfection of talented chefs across the country. And they are eager to discover more "gems" in the years to come."
