Relatives said the jar of bamboo shoots had been soaked for a year and the family was eating them gradually. On June 11, the wife drank about 200 ml, and the husband drank 30 ml. Five minutes after drinking, she complained of a headache, vomited a lot, fell into a coma, and blood tests showed severe metabolic acidosis and high blood lactate.
The patient was intubated, put on a ventilator, then transferred to the Poison Control Center, Bach Mai Hospital ( Hanoi ), suspected of cyanide poisoning, with a severe prognosis.
The samples brought by the patient were tested, the results showed that all samples contained cesium. In particular, the cesium content in gastric juice was 0.5 mg/L; blood 1 mg/L; urine 2 mg/L.
On June 16, Dr. Nguyen Trung Nguyen, Director of the Poison Control Center, said that xia nua is an extremely toxic substance, the lowest dose that can cause death in humans is 0.56 mg/kg of body weight. With the patient's weight, taking 30 mg of xia nua can cause death. The husband did not get poisoned because he took a small amount.
The patient was treated with intensive care, her condition gradually improved, she became alert, her tests returned to normal and she was extubated. After 4 days, the woman was discharged from the hospital.
Some plants contain precursors of succinate (called succinate glycosides). When ingested, these substances will be converted into succinate, most typically cassava and bamboo shoots (bamboo shoots, rattan, bamboo, etc.).
In fact, the amount of toxins in bamboo shoots is greatly reduced through processing such as boiling, soaking, and fermenting. When soaked, the amount of toxins in this food may decrease but the toxins in the water increase, so drinking too much bamboo shoot water will cause poisoning.
"Poisoning from eating bamboo shoots is very rare in humans and only occurs when eating too much to the point of being full or eating instead of rice. In particular, the toxin in fresh bamboo shoots is many times higher than in well-processed bamboo shoots," said Dr. Nguyen. In addition, Mr. Nguyen said people can safely scoop up a few small spoons of bamboo shoot juice as a seasoning.
To prevent this, doctors recommend that people should prepare the bamboo shoots thoroughly before eating. For example, they should boil bamboo shoots for 1-2 hours; fresh bamboo shoots should be cut into small, thin pieces before pickling, then soaked in water for 24 hours. Note that during the process of boiling or soaking bamboo shoots, the water should be changed many times to effectively remove toxins (because the old water has toxins diffused from the bamboo shoots).
People should also avoid eating too much bamboo shoots. The water used to soak bamboo shoots can be used as a seasoning but should not be drunk in excess.
