Making:
Step 1: Prepare ingredients
Wash the pork, wait until it is completely dry, then cut into small pieces and put into a blender. Wash the pork skin, rub with salt to remove the slime and odor, then put it in a pot to boil. When the pork skin is cooked, take it out to drain, then use a sharp knife to cut it into small, not too long strips. Wash the chili and garlic, peel and chop finely.
Step 2: Marinate the nem chua mixture
First, put the minced pork into a large bowl, add the pork skin and mix well. Season with a little salt, 50g sugar, 2 teaspoons fish sauce, tapioca starch, rice bran, pepper, garlic and chili and mix well.
Step 3: Make the flour mixture
Take a bowl, add 2 tablespoons of flour, 1 tablespoon of cornstarch, a pinch of salt, MSG and 1 egg yolk. Slowly pour water into the bowl, stirring constantly to form a smooth mixture without lumps.
Step 4: How to make fried spring rolls
Take the mixture mixed in step 2, take a little at a time, shape it into a long stick, then dip the spring roll into the flour mixture mixed in step 3 and slowly roll it on the plate of fried flour, keep doing like that until the fried flour covers the whole spring roll.
Finally, put the spring rolls in the pan and fry evenly over medium heat. After about 3 minutes, the spring rolls will be golden brown on all sides. Remove the spring rolls and place them on a plate lined with oil-absorbing paper.
