According to Medical Xpress, to clearly demonstrate the health benefits of broccoli , researchers from Pennsylvania State University (USA) conducted experiments on mice to see how the body would specifically react when eating this dish.
They fed mice a higher proportion of broccoli than is commonly recommended for humans to get the clearest response. They ate food containing up to 15% broccoli, which is equivalent to a person eating 3.5 cups of broccoli a day.

The paper, published in the journal Laboratory Investigation, discovered the presence of molecules in broccoli called "aryl hydrocarbon receptors" (AHR), a type of protein known as a transcription factor.
These AHRs influence a range of activities related to intestinal function, helping to protect intestinal barrier function and intestinal transit time, increasing several intestinal protective factors.
