How to make black bean water:

Rinse and drain the black beans, then roast them in a dry pan over low heat for about 10 minutes, until you hear a slight popping sound and the bean skins crack slightly. Simmer the black beans over low heat for about 20-30 minutes. If you have time, you can soak the roasted black beans in hot water for 30-60 minutes before simmering.
