Walking along the narrow alley 115 Le Van Sy Street (Phu Nhuan District), surrounded by the cool shade of trees, I found the noodle soup shop of Mr. Phan Duy Tan's family (43 years old), located peacefully along the train tracks.

At 10 o'clock, the restaurant opened to welcome customers. Nearly a dozen employees inside were still busy preparing, each with their own task. The restaurant, which was also Mr. Tan's family home, had not been open for long when dozens of tables inside were filled with customers, the owner and employees working "out of breath" to prepare dishes for the customers.

When my father passed away, my mother had to choose a profession to support my siblings and she chose to sell this dish. Thanks to this restaurant, we are who we are today and my mother just stayed with her siblings and did not remarry anymore!

Confiding in me, Mr. Tan said that the restaurant was opened by his mother, Mrs. Men, in 1989 to have money to raise 8 children when his father had just passed away. Before that, she had sold this dish for about 3-4 years when she was still living in Dong Nai .

The restaurant is famous for its fresh young water spinach.

The shop opens at 10am to prepare the necessary ingredients.

At first, she sold her goods around Phu Nhuan area, then after a few years, she mainly sold near Tran Huu Trang market. In 1998, Ms. Men moved back home to sell and the shop has been "settled" here until today.

“When my father passed away, my mother had to choose a job to support my siblings and I, and she chose to sell this dish. Thanks to this restaurant, we are who we are today, and my mother just stayed with her siblings and did not remarry,” he emotionally recalled his late mother.

Mr. Kiem (50 years old, second son) and his younger brother own the restaurant and inherit their mother's restaurant.

That is also the reason why in 2009, when his mother handed over the noodle shop to him to inherit, he decided to name this noodle shop "My Mother" as a reminder for him and his siblings of his mother's birth and upbringing, as well as to remind his children and grandchildren that their parents, uncles, aunts... were raised and matured thanks to her restaurant.

Talking about the title "the noodle soup shop with the most names in Ho Chi Minh City", the owner smiled gently, explaining that the reason customers call the shop "train road noodle soup" is because in front of the shop is a train track, if the timing is right, customers can observe the trains passing by every day.

As for "bun canh tren seo" (upstairs noodle soup), it's because in the past, the restaurant was upstairs, and customers had to take the stairs up to eat. However, in recent years, many of the regular customers of the restaurant have been here for decades and are getting older, so going up and down is quite inconvenient, so his family has moved down to the ground floor.

“At that time, my mother wanted to pass on this noodle soup shop to me, because I was the youngest child in the family. At that time, I was working as a math teacher at a middle school in Phu Nhuan, so I was very hesitant. In the end, I could not bear to let people forget the restaurant that my mother had built up all her life, so I inherited and developed it until today,” talking about that decision, the owner has never regretted it.

Mom lives forever in the hearts of her children

Currently, Mr. Tan said that all eight of his children make a living from their mother's profession. This restaurant is run by him, Mr. Kiem (50 years old, the second son) and a second sister. However, this sister passed away not long ago.

Ms. Thanh and her husband have developed her mother's restaurant since 2005, since she became a daughter-in-law.

The rest of Mr. Tan's siblings are also living with smaller noodle soup shops, mainly selling to neighbors and acquaintances in many different areas of Ho Chi Minh City. That is the reason why, although his mother passed away 5 years ago, he still feels her presence, accompanying and helping his children to have a stable life.

Each portion of noodle soup in this restaurant ranges from 27,000 to over 40,000 VND depending on the customer's needs. Because the restaurant cooks in the Northern style, the broth is quite clear, but still very tasty.

Ms. Vu Phuong Thanh (42 years old, Mr. Tan's wife) said that since she became a daughter-in-law here in 2005, she has been helping her husband's family run this restaurant until now. What she is most proud of in her husband's family's noodle soup is the harmonious combination and freshness of each ingredient. "Customers like the most is rau nhut, many people who eat noodle soup also order a bowl of rau nhut to eat it with," she added.

The owner is proud that besides the recipe passed down from his mother, fresh ingredients are what make the difference in the noodle soup at his restaurant.

As a "fan" of rau nhut, I ordered a bowl of vermicelli soup with an extra bowl of rau nhut to eat. Having eaten here many times, I like the broth and the crab cakes the most. Of course, the young rau nhut is indispensable, which I don't know where the restaurant imports to have such fresh vegetables.

Having been a customer here for decades, Ms. Thanh (57 years old, living in Phu Nhuan District) said she loves the taste of the restaurant's noodle soup, like it's "enchanted". She comes here almost 2-3 times a week, sometimes more because her house is not far from here.

“I have been eating here since the owner started selling. I have eaten at many places but this is the place I like the most. I love eating rau nhut, the vegetables here are young and delicious, and the service is also fast," the customer commented.

Mr. Tan and his family members said that the restaurant is now not only his mother's passion, but also his and everyone's. He will try to maintain and develop the restaurant further, selling until he no longer has the strength, and hopes that in the future, there will be a third generation to inherit the restaurant carrying his mother's love...
