Trang Bang noodle soup
Trang Bang noodle soup is unique and elaborate, from the stages of rolling the noodles, preparing the broth to making the dipping sauce. Perhaps that is why for more than a century, Trang Bang people still consider this their familiar breakfast. And in Ho Chi Minh City, although it is not difficult to find a Trang Bang noodle shop cooked by Tay Ninh people, finding the birthplace of the dish to enjoy it is still the most interesting thing for tourists from near and far.
The original noodles are made from Mong Chim rice or Bang Phet rice. These are types of rice originating from the Khmer people. Although they are not very tasty when cooked, when made into noodles, they are quite sticky, have moderate toughness, and can still be used after two or three days. Nowadays, because these types of rice have low yields and are no longer popular, people have replaced them with Nang Thom, Nang Mien or Cho Dao rice.
Selected pork includes lean meat, thighs or ham, hooves are washed, put in a pot of boiling water, bring to a boil gradually, when just cooked, take out immediately, put back into cold water to make the meat crispy and smooth.
Tay Ninh grapefruit spring rolls

Tay Ninh mountain snail
Tay Ninh mountain snail specialty is also known as Ba Den mountain snail, Ba Xu mountain snail or Nang Hai snail, a famous dish that every tourist wants to enjoy. Mountain snails do not live in ponds, lakes or streams, but usually live in caves and crevices of Ba Den mountain. On rainy days, snails crawl out to find food and reproduce, only then can you see mountain snails. Therefore, when the rain falls is the time to catch mountain snails.
The Ba Mountain Snail has the shape of a small coin, with a large head and gradually narrowing at the back. This snail only eats precious herbs found on the mountain such as: Mountain Vong leaves, Ma Tien tree, and Nang Hai leaves, so the snail meat is very delicious and has a characteristic aroma.
Tay Ninh mountain snails have long been a specialty dish and are only available in the Ba Den mountain area. The number of mountain snails in the wild is decreasing due to human fishing. Therefore, in Tay Ninh, there are many models of breeding and raising natural mountain snails to meet the consumption needs as well as reduce the possibility of extinction of this snail species.
