(Baohatinh.vn) - Consumers are choosing to use more traditional fish sauce, causing cooperatives and processing facilities in Ky Anh Town (Ha Tinh) to rush to increase production to meet demand.

Like previous years, in the first 5 months of the year, the facility only purchased about 60-70 tons of fish to make fish sauce, but this year, Chien Thang Seafood Purchasing and Processing Cooperative has purchased more than 100 tons of various types of fish to produce fish sauce to meet the current high market demand.

Mr. Dang Dinh Minh - representative of Chien Thang Seafood Purchasing and Processing Cooperative said: “Recently, many consumers have returned to using traditional fish sauce products, so the output of fish sauce sold by our Cooperative has increased by more than 40% compared to the same period in previous years. Up to now, the Cooperative has sold more than 250,000 liters of fish sauce of all kinds. The Cooperative has also just invested in 600 more large-sized earthenware jars and built 30 fish sauce fermentation tanks using solar energy to increase output to meet the needs of domestic and foreign customers...”.

To increase production, Chien Thang Seafood Processing Cooperative invested in 600 large earthenware jars and built 30 solar-powered fish sauce tanks.

At Nhat Ninh fish sauce processing facility (Ky Ninh ward), orders from inside and outside the province are also sent regularly every day. Ms. Nguyen Thi Ninh - representative of the facility said: “The fish sauce products of our facility all meet 3-star and 4-star OCOP quality, so they are very trusted by consumers. Recently, our facility has received many orders from inside and outside the province wishing to become agents to sell products. Currently, on average, we sell 200 - 500 liters to the market every day, almost double the previous level. This is really good news for traditional fish sauce producers like us...”.

It is known that Ky Ninh Ward has about 100 households producing traditional fish sauce, including 1 cooperative, 4 establishments participating in the production of fish sauce with 3-star and 4-star OCOP ratings. Mr. Tran Ngoc Phu - Vice Chairman of Ky Ninh Ward People's Committee said: "Recently, many consumers have returned to choosing to use traditional fish sauce to ensure health and nutrition. Thanks to that, most of Ky Ninh's fish sauce processing establishments have increased their sales volume to the market. In particular, at OCOP fish sauce production establishments, the output has nearly doubled compared to the same period last year. Thereby, not only increasing income for production households, creating more job opportunities for workers but also contributing to bringing the Ky Ninh fish sauce brand closer to consumers...".

It is known that Ky Anh town currently has 6 establishments processing traditional fish sauce that meets OCOP standards, of which Ky Ninh ward has 5 units, Ky Ha commune has 1 unit. The main raw materials for producing fish sauce are marine fish, the most popular are anchovies, catfish... purchased by establishments right in Ky Anh town. The quality of fish sauce depends on the salting time, sunny weather, especially fish and salt, so the establishments are very careful in choosing ingredients to ensure the deliciousness of traditional fish sauce. Thanks to that, traditional fish sauce of Ky Anh town is trusted by many domestic and foreign customers.

Traditional fish sauce of Ky Anh town is not too salty, not sweet from sugar but sweet from fish protein, the strong flavor is typical of the traditional brewing method preserved for hundreds of years.
