Ms. Pham Thi Xuan, Quang Lap village, Tri Quang commune, Bao Thang district, Lao Cai province has successfully started a business from the model of processing cinnamon-flavored salted chicken products. In early 2025, we visited the herbal salted chicken and fresh cinnamon sausage processing workshop of Xuan Huong FOOD at the Clean Food Processing Cooperative in Tri Quang Commune, Bao Thang District.
The first impression when entering the factory is the aroma from the sausage drying oven and the chicken steaming stove spreading throughout the house. Everyone is attracted by the aroma of cinnamon, ginger, herbs mixed with the smell of fresh chicken when steamed.

Ms. Pham Thi Xuan, Clean Food Processing Cooperative of Tri Quang Commune, Bao Thang District said: My family has had a tradition of processing Chinese sausages, ham, sausages... for many years. After researching the market, I borrowed more capital from the bank to invest in facilities, machinery, and equipment to process more cinnamon-flavored salt products.
Previously, my family mainly worked on a small scale, after participating in the Women's Entrepreneurship Program, it helped me gain more knowledge and experience in connecting product consumption. By 2022, my family had added cinnamon-flavored salted chicken products to the market.
In addition, from the fact that many households raise chickens in villages in Tri Quang commune with large farms, this is an abundant resource. I always think about how to process it into other products to help people consume, helping to increase the value of that clean product to a new level.

According to Ms. Xuan, spices are the most important thing to create cinnamon salted chicken products, in which cinnamon is the main spice, in addition, some spices must be purchased from companies that are not available locally such as pink salt, star anise, pepper, cardamom. For pink salt, when marinated on chicken, it will make the meat beautiful.
Cinnamon-scented salted pepper chicken is made from local chicken, imported whole, weighing about 1.4kg from a safe farming area in Bao Thang district, processed into separate stages to ensure hygiene and maintain freshness, so the chicken here has moderately chewy, crispy meat, and sweet meat.
Therefore, when the chicken is cleaned and the gizzards are removed, it will be processed with a special recipe, marinated with traditional spices to bring out a delicious and unique flavor.
After marinating, leave the chicken for about 12 hours before steaming and salting at a moderately high temperature for 4 hours to create a delicious cinnamon-flavored chicken product.

After steaming, the chicken will be brushed with a layer of turmeric oil and Sichuan peppercorns to create a beautiful golden color. The finished chicken is quickly cooled, vacuum-packed and stored immediately in cold temperatures, the cold storage time can be many days.
Ms. Xuan's family's salt-cured chicken products have now been certified with 3-star OCOP at the provincial level, with beautiful and luxurious packaging, complete with traceability labels, business licenses, and food safety certificates.
Every day, the facility sells 10-20 finished chickens to the market, with the current selling price of about 280 thousand VND/chicken, earning more than 3 million VND/day. The main market is inside and outside the district, because Ms. Xuan's family's salted chicken products are known to many consumers.

Ms. Pham Thi Xuan added: Every year, the quantity will be doubled compared to normal days, especially during the holidays. However, this year, due to the impact of storms and floods, farmers have also been greatly affected, leading to very high prices for input materials. Therefore, when the price of imported input materials is high, the price of salted chicken products will also be high, low-income people will have to save and buy less.
If last year, Ms. Xuan's family was busy making salted chicken with cinnamon flavor, this year the family only makes it according to people's orders. Thanks to diversifying products such as chicken, sausage, dried meat..., it has contributed to increasing the income of Ms. Xuan's family and creating sustainable jobs for many local workers.

Sharing about her plans for the future, Ms. Xuan expressed: Currently, I will continue to maintain the current supply to the market. At the same time, I will continue to research and aim to further process fish products, aiming to bring products to larger consumer markets in and outside the province.
According to the leader of the People's Committee of Tri Quang Commune, Bao Thang District, Lao Cai Province, currently in Tri Quang Commune there are more than 300 households raising chickens, with hundreds of thousands of chickens. This is also one of the localities with the largest number of chicken raising households in Bao Thang District.
