Although the production area, productivity and quality of vegetables and fruits in the province have increased over the years, the system of facilities and deep processing factories is still limited, so farmers always face the pressure of product consumption and the situation of good harvest but low prices. Hong Nhue High-Tech Green Agricultural Cooperative (Hoang Hoa) is one of the few units that both produce and participate in deep processing of vegetables, tubers and fruits to increase economic value. Although only implementing a small part of the production output, the products of the cooperative have been well received and highly appreciated by the market.
Director of the Cooperative Le Thi Nhung shared: In 2022, due to the COVID-19 pandemic, the cooperative's agricultural products were difficult to sell, production was difficult, so we researched processing technology to produce pickled and fermented products to reduce pressure at the consumption stage and succeeded with the product of pickled baby melons with apricot vinegar. By choosing self-produced ingredients such as young fresh melons pollinated for 5-7 days, sugar, garlic, chili and some accompanying spices such as coriander, carrots pickled and fermented according to a new and sterilized method, eliminating unnecessary fermentation bacteria to help preserve the product longer than conventional salted products in the traditional way, and the product has been well received by the market and consumers.
It is known that after realizing that the pickled products are suitable for the market's taste, Hong Nhue high-tech green agricultural cooperative also implemented the idea of drying and drying some agricultural products manually to extend the shelf life and processing some simple products, such as: potato snacks and frozen potatoes. Currently, the products processed from vegetables, tubers and fruits of the cooperative are being sold at supermarket systems, clean food stores, and OCOP product introduction chains in and outside the province.
With the disadvantages of difficult preservation, fluctuating output, quality depending largely on weather conditions, and unstable prices, post-harvest processing of vegetables and fruits is always a difficult problem. Understanding that characteristic, Hoang Giang Agricultural Processing Factory (Hoang Giang Commune, Nong Cong District) has joined in the processing of a number of canned vegetable and fruit products, contributing to increasing the economic value for producers. Mr. Hoang Ngoc Ha, factory director, said: The factory has a number of processed vegetable and fruit products such as chili, lychee, sweet corn, mango, pineapple... canned for export. Processing vegetables and fruits not only helps control costs, but also increases the value and competitiveness of goods in the market, contributing to solving the problem of "good harvest, low price" and vice versa. Thereby, helping farmers feel secure in production, associated with maintaining and improving quality, meeting market requirements. It is known that in 2025, Hoang Giang Agricultural Processing Factory has cooperated with cooperatives and cooperative groups in districts in the province to develop hundreds of hectares of sweet corn, pineapple, chili, soybeans and vegetables to meet raw materials for processing.

According to statistics from the Department of Agriculture and Environment, there are currently 16 enterprises in the province involved in deep processing of vegetables and fruits into commercial products. Of these, there are 6 fruit processing enterprises, mainly processing canned pineapple with a total capacity of 13,600 tons/year and 10 enterprises specializing in processing and preserving vegetables with a total capacity of 21,500 tons/year. Although the average output of vegetables and fruits in the province reaches nearly 600,000 tons/year, according to a survey by the agricultural sector, the output of vegetables and fruits that are pre-processed and processed before being put on the market is only about 20%, the rest is consumed in raw form. Of which, there are some processed products such as pickled cucumbers, pickled chili peppers, frozen chili peppers... consumed more than 60% in the provincial market and about 30% of safe vegetables are supplied to major cities in the North and a part is exported to markets in China, Korea, Japan, Russia, France, Belarus...
In addition, from processing vegetable and fruit products, the province has created high-quality, branded products such as canned pineapple, canned corn Truong Tung (Nong Cong); canned pineapple Tu Thanh (Thanh Hoa City) achieving 4-star OCOP quality, exported to Russia and Ukraine markets, and dozens of vegetable, root and fruit products recognized as 3-4 star quality, strongly consumed in the national market, contributing to raising the total value of processed vegetable and fruit products to nearly 2,000 billion VND/year.
Production reality shows that deep processing and refined processing are not only fundamental solutions to increase the efficiency of agricultural production as well as people's income, but also to build a modern professional production. Therefore, the province has been encouraging the development of enterprises and facilities for processing vegetables and fruits. At the same time, it encourages enterprises and cooperatives to shift their product structure towards deep processing and refined processing, contributing to the formation and development of the vegetable and fruit processing industry in the direction of linking the value chain from production - processing - consumption stages, building quality products, high added value, aiming at the export market.
