According to information from the Japanese Embassy in Vietnam, on the occasion of the 50th anniversary of the establishment of Vietnam-Japan diplomatic relations, Japan will implement a new initiative on Vietnamese-Japanese street food, aiming to connect the culinary cultures of the two countries.
In this project, each of the three Vietnamese and Japanese chefs will introduce two new dishes with Vietnamese-Japanese flavors created by themselves, demonstrating the friendship between the two countries.
The organizers also introduced on the website https://jp-culinaryfes.vn the recipes of these 6 original dishes, which were prepared by 3 chefs combining traditional Vietnamese and Japanese processing methods and ingredients, and organized a vote for the most favorite dish.
Accordingly, chef Shinobu Ito, a Vietnamese cuisine researcher in Japan, will bring two dishes made from simple but typical ingredients of both cuisines, including Okonomiyaki-flavored grilled rice paper and grilled rice balls with fish sauce.
Vietnamese chefs Huynh Thanh Lam and Nguyen Ba Phuoc will bring dishes that are variations of popular Vietnamese street foods with Japanese flavors, including spicy cod yam cakes, sea bass cutlet sandwiches, lotus root shrimp tempura, and spicy miso grilled chicken skewers.

Of the six dishes created by the three chefs, the three that receive the most votes will be served at the Japanese Cultural Festival held in Hanoi this November. At the event, the chefs will share their thoughts and backgrounds behind the recipes they created.
In addition, during mid-November, the organizers will also distribute free e-books of recipes for these 6 dishes along with instructions from the chefs on how to cook them.
Through the actual serving of the dishes and the introduction of the recipes, the organizers hope that people from both countries will get to taste these dishes, and hope that these dishes will be prepared as basic dishes in families in both countries in the coming years.
