According to Jimu News (China), Mr. Dinh, 37 years old, from Jiangsu province (eastern China), after defending his doctoral thesis in the country, went to Belgium to do postdoctoral research on soil management and crop production. He has published about 30 scientific articles.
Dr. Dinh met his wife, Ms. Vuong, in college. They married and settled in Belgium in 2015, where they welcomed their first child. However, outside of his research work, Mr. Dinh had difficulty finding a stable job, so he decided to start a business with his wife.

Last May, they opened a stall selling spicy bean noodles, a specialty of Ms. Wang’s hometown of Chongqing, at local markets in Belgium. The dish combines chewy noodles with soft beans and a rich pork sauce, appealing for its spicy and salty flavors. To suit European tastes, Ms. Wang has toned down the spiciness.
She said she grew up eating this dish and has long cherished the dream of opening a shop. The shop only has a few tables and chairs for customers to sit. The ingredients are prepared in advance so each bowl only takes a few minutes to serve.
The couple only open two days a week, each bowl costs between 7 and 9 euros, depending on the type of noodles. On busy days, revenue can exceed 1,000 euros. When not helping his wife, Dinh continues to look for full-time work.
“Street vending is like research, the main purpose is still to support the family,” Ms. Vuong shared.

According to SCMP , videos of the couple’s noodle stall have attracted more than 78,000 followers on Chinese social media. In one “stormy” clip, an elderly woman struggles to hold chopsticks and praises: “This is the best Chinese noodles I’ve ever eaten.” Another regular customer says: “I didn’t know beans could be so delicious.”
The couple’s story quickly went viral. One netizen commented: “They are truly great entrepreneurs, bringing Chinese street food to the world and turning it into a source of income.” Another wrote: “Chinese cuisine has so many delicious dishes that deserve to be shared everywhere.”
